Impossible Pizza

500g (1lb) mince meat
1.1/2 cups milk
3 eggs
1 cup grated cheese
1 large onion
3/4 cup SR Flour
sliced tomato
parsley

Method: Cook together mince and onion chopped finely. Stir in 1/2 tspn salt, pepper and herbs to taste. Discard any fat or juices and spread in greased pie plate. Mix together and beat well the milk, flour and eggs and pour carefully over the mince. Bake at 400F (200C) for 25mins. Remove from oven and top with sliced tomato and sprinkle with grated cheese and parsley. Return to the oven for about 10mins, or until cheese has melted and browned.

Ham, Pineapple and Mint Dip

4 oz cream cheese
1 tspn of prepared mustard (Hot English)
2 slices ham chopped
fresh mint chopped to taste
2 pineapple rings, chopped
fresh ground pepper

Method: Mix cream cheese with enough milk for good firm dipping consistency. Add all other ingredients, adjust flavours for individual taste.

Dinner in a Frying Pan

2 level tablespoons butter
1 lb. minced steak
1 small chopped onion
2 cups Vegeroni noodles
1.1/2 cups water
1 tablespoon tomato paste
1 teaspoon sherry
1 teaspoon Worcestershire Sauce
1 level teaspoon celery salt (or 2 sticks celery)
Pinch of pepper
1/2 cup stock (Oxo)
1/2 cup sour cream; parsley

Method: Melt butter, brown meat and onion stirring occasionally. Pour noodles over browned meat. Combine tomato paste, Worcestershire sauce, celery salt, salt, pepper, stock and water. Pour over noodles. Simmer with lid on for 25 minutes or until noodles are soft. Stir occasionally. Stir in cream and sherry. Serve sprinkled with parsley.

Salmon Souffle

Line greased casserole with bread buttered on both sides (cut off crusts for lighter crust). Mix together 1 can tuna (450 grams) well drained with 1.1/2 cups matured cheese spread over dish. Place another layer of bread buttered both sides on top. Pour over a mixture of 3 eggs beaten with 2 cups of milk. Seasoning to taste. Press down firmly and leave to settle several hours. Bake 1 hour in moderate oven.

Lemon Cream with Fruit

1 cup sugar
pinch salt
1/2 pint water
2 tbs butter
1/4 pint cream
1 tbs plain flour
1 tbs corn flour
1/4 cup lemon juice
1 beaten egg
grated rind small lemon

Method: In a small saucepan mix sugar, flours and salt. Blend with a little of the water then add the rest with lemon juice and rind. Stir over heat until boiling and thickened. Add a little to beaten egg, return to saucepan and stir till thickened a little more. Remove from heat, add butter and cool. Beat cream till thick and fold in prepared mixture. Chill. Serve with pineapple, banana, lychee. [Serves 6]

Quick BBQ Sweet

Put a banana on its side, slit the length with a knife. In the slit place pieces of milk chocolate and heat on the BBQ until the chocolate melts. Eat hot.

Okonomiyaki Crepes

Pancake mixture: 4 oz. flour, 1/2 pint water
Shredded cabbage
Finely sliced pork
1 egg

Method: Mix flour and water and cook 1 7" pancake in frypan. Cover pancake with shredded cabbage. Break egg into middle of cabbage. Place a layer of sliced pork over pancake. To bind thinly cover with more pancake mixture. Turn when ready and cook until pork is tender. Serve with rice, seaweed balls and Okonomiyaki sauce, tomato or worcestershire sauce.

Blade Pie

1.1/4 lb blade steak, diced
2 rounded tbs flour
1/2 cup water
1 tsp salt
pepper
Pampas Puff Pastry

Method: Mix all together and steam 2 hours. Chill. Cover pie tin with a sheet of Pampas puff pastry, put in meat and cover with another sheet of puff pastry. (This can then be frozen until needed). Bake at 400°F for 20-25 mins. [Serves 6]

Mock Yeast Cake

2 tbsp. Butter
2 cps. S. R. Flour
1/2 cp. Sugar
1/2 tsp. Salt
1/2 cp. Sultanas or Currants
1 cup Beer

TOPPING:
1 tbsp. melted Butter
1/2 cp. Sugar
1/2 cup. plain Flour

Method: Rub butter into sifted flour, sugar and salt. Add sultanas or currants and mix together with beer. Put into baking dish approximately 12" x 10" and spread evenly. Rub topping ingredients together until crumbly, then sprinkle over cake mixture. Bake in a moderate oven for 20-25 minutes.

Spinach Soup

1 bunch Spinach
30 gm Butter
White Pepper to taste
2 Hard Boiled Eggs
3 Chicken Stock Cubes
2 tblspns Flour
1/4 tspn nutmeg

Method: Melt butter in large saucepan and stir in flour. Pour in combined water & stock cubes & stir until boiling. Add spinach, reduce heat & simmer for 15 mins. Stir in pepper & nutmeg. Serve in soup bowls & garnish with slices hard boiled egg.

Tuna and Chicken Loaf

470g can tuna
1 packet chicken noodle soup
1.1/2 cups fresh bread crumbs
1 dessertspoon chopped gherkins
1 dessertspoon chopped onions

Method: Mix all together with 1 egg. Put in nut loaf tin and cook 40-45 minutes in moderate oven. Let stand for 5 minutes in tin, turn out and roll in dry breadcrumbs.

Haddock Kedgeree

500g (1 lb) smoked Haddock
90g (3oz.) butter
3 cups cooked rice
salt and pepper
1 cup cooked peas
1 can Asparagus pieces (drained)
Lemon juice

Method: Place smoked Haddock in saucepan. Just cover with water and squeeze a little lemon juice into water. Cook 8-10 minutes. Drain fish, remove skin and bones and flake coarsely. Melt butter in frying pan, add cooked rice and cook 3 minutes. Add fish, cooked peas, Asparagus pieces. Season with salt and pepper, stir the mixture until heated. Garnish with hard boiled eggs.

Banana Rice Salad

2 bananas
4 tspn lemon juice
1 cup cooked rice
sultanas
1/2 cup grated carrot
1 tspn dried bacon bits
1 tspn garlic salt

Method: Mix together bananas and lemon juice. In a large bowl mix remaining ingredients then add bananas.

Banana Salad (1)

1 cup mayonnaise
1 cup cream
4 tspn horseradish

Method: Mix altogether and pour over 6 bananas, cut into lengths. Apple can be used in the same way. This is nice as a barbeque salad.

Swiss Steak

1/4 cup flour
2 tblspn vegetable oil
1 x 440gm. can Rosella Beef Stockpot Soup
625g round steak
1/4 cup water

Method: Pound floured steak with meat mallet. Cut steak into strips, brown on both sides in vegetable oil. Add soup and water, cover and cook over low heat for 40-45 minutes, until meat is tender. Add more water if sauce gets too thick. Serves 4.

Egg and Bacon Pie

3 eggs
1.1/2 cups grated cheese
1 onion chopped finely
1/2 cup chopped bacon
1.1/2 cups milk
3/4 cup pastry mix

Method: Beat eggs and add to all other ingredients. Pour into greased tart plate. Sprinkle with parsley flakes. Cook 45-50 minutes in moderate oven.

Jenny's Chicken Casserole

Seasoned flour: wholemeal flour with some garlic salt, mixed herbs, paprika, oregano, pepper, mixed
2 rashers bacon, cut small

Method: Toss chicken pieces in flour and brown in frying pan. Put into casserole and sprinkle on the bacon. Cover and bake in moderate oven 50 mins.

Sauce:
1 sm can champignons
1 sm can mushrooms in butter sauce
butter to saute
1 sm dsp French mustard (with seeds)
1 dps flour
1 lge chopped onion

Saute onion in butter. Remove from pan. Mix mustard and flour in butter, add juice from chicken. Make into thick sauce with juice from champignon tin and a little milk and cream. Add onion, champignons, mushrooms, and mix. Pour over cooked chicken and return to oven for 10 minutes. [Serves 6]

Beer Cake

3 oz. Sugar
3 oz. Butter
4 cps. S. R. Flour
1/2 bottle Beer
1 dsp. mixed Spice
2 handfuls mixed Fruit

TOPPING:
1 tbspn. Butter
1 tbsp. Sugar
little Coconut

Method: Rub the butter into the flour and sugar, add fruit. Mix to a nice soft dough with beer, then pour into a lined baking dish. Make topping by mixing butter, sugar, and little coconut together. Sprinkle over cake mixture and bake for 1 hour. Remove from oven, sprinkle with cinnamon whilst still hot, then allow to cool. Spread with butter or serve plain.

Salmon Mouse [sic]

6 Hard Boiled Eggs
15 oz Red Salmon
4 Gherkins
1 tblspn Gelatine
1 cup Hot Water
Salt & Pepper to taste
1 cup Dry White Wine
1/2 cup White Vinegar
1/2 cup Lemon Juice

Method: Dissolve gelatine in hot water, stir in wine[,] vinegar and lemon juice. Arrange sliced boiled eggs, 2 of the gherkins in the bottom of mould. Pour over a little gelatine mix. Refrigerate until set. Drain salmon, remove bones and skin, mash lightly with fork. Chop eggs & gherkin & mix with salmon. Season remaining gelatine mix with salt & pepper & combine with salmon mix. Pour into mould and refrigerate until set.

Walnut Soup

125g. walnuts, chopped (Use shelled walnuts. They can be bought in tins. If you have to do it yourself, cover walnuts with water, bring slowly to boil, simmer for a few minutes, then drain and start peeling. You'll need help.)
1 clove garlic, crushed
4 cups beef or chicken stock
3/4 cup cream
salt
Freshly ground pepper

Method: Using a food processor, electric blender or pestle and motar [sic] pound the walnuts with garlic and a little of the stock until quite smooth. Add to the remaining stock. In a large saucepan, heat the cream to boiling point then stir in the walnut mixture. Heat gently and season with salt and pepper. Serve hot or cold.

Happy New Year: Poppa's Punch

2 litres of fruit cup cordial
2 litres of orange cordial
4 litres of lemonade
4 litres of ginger ale
4 litre cask of St Tropez wine cooler
6 bottles of cheap champagne
1 bottle of sweet sherry
lots of chopped mint
lots of cucumber skin
banana slices, strawberries, etc.
1 bottle of gin (optional)

Method: if too sweet add more ginger ale or riesling. If not sweet enough add moselle.
