Bran and Bean Meat Loaf

(yields 10 slices)

1&1/2 lb. [750 gm.] minced steak
1 onion finely chopped
1 egg
2 bacon stock cubes, crumbled
1 tablespoon tomato sauce
1&1/2 cups All-Bran
Small can bean mix, drained

Method: Grease 8" x 4" (20 cm. x 10 cm.) log tin. Combine all ingredients and mix well. Press into the greased tin and bake in a moderately hot oven for 1&1/4 hours.

Anniversary Beef

Feeds 10

1 kg. beef cubed and rolled in flour / salt pep[per] / 1 small can pineapple pieces / 2 medium onions / 1/2 capsicum / 1/2 cup tomato sauce / 1 tabs hot sauce / 1/4 cup brown sugar / 1/4 cup vinegar / 1 teas. mustard / 1 small can peas / 440gm can three bean mix / 3 medium carrots / small amount of fat.

Method: Rub meat pieces in flour salt & pepper.
Brown in hot fat, pour off excess fat. Put all remaining ingredients (except peas, beans and pineapple) in casserole dish with meat.
Cover and simmer approx. 1[&]3/4 hours. Remove from oven.
Heat through and simmer peas, beans and pineapple for 1/2 hour, ADD to casserole ingredients.

Bean Tuna Bake

2 cups white sauce made with skim milk / 1 teas. french mustard / 125g tasty cheddar cheese grated / 1x 740gm can three bean mix drained / 1x 440gm can tuna in brine (drained & flaked) / 1 teas. fresh lemon juice / 1 cup soft breadcrumbs (wholemeal).

Method: Blend french mustard and cheese with prepared white sauce. Stir till smooth and remove from heat. Place half of the three bean mix in greased casserole dish, and spread tuna over top. Sprinkle with lemon juice and pour over half sauce. Add remaining beans and spread remaining sauce over. Sprinkle breadcrumbs evenly over top. Bake in pre-heated oven 180C for 30 minutes, until heated through and golden brown. Serve with side dishes of vegies. Serves 6.
