Chocolate Rough Eggs

100g copha, 3/4 cup icing sugar, 1/3 cup coconut, 2 level tspn sifted cocoa, 1&1/2 cups rice bubbles finely crushed.

Method: Melt copha gently, then mix with sifted dry ingredients. When almost cold, press into moulds. Place in fridge to set hard. (approx 1/2 hour). Trim excess chocolate from rims. Carefully run a thin bladed knife around edge of mould. Egg will then fall out of mould.

Rice Bubble & Date Tart

4 oz dates
1 Tbsp honey
4 cups Rice Bubbles
4 oz butter
1/2 cup sugar

Method: Heat dates, butter, honey and sugar. Stir until like syrup then mix with Rice Bubbles. Press into pie dish. Squeeze lemon juice over sliced bananas and arrange on top. Pile whipped cream on top of bananas.

Crunchy Meat Balls in Cheese Sauce

1/2 lb. sausage mince
Salt and pepper
1 tablespoon tomato sauce
3/4 cup rice bubbles
1 small egg

Method: Combine all ingredients into balls, roll in flour and lightly brown in frypan. Lift out into pie dish and prepare the following cheese sauce. Melt 1 dessertspoon butter, stir in 1 tablespoon flour then cook for 2 minutes without browning, stirring well. Add salt to taste, then 3/4 cup milk and stir till sauce boils and thickens. Finally, add 2 ozs. grated cheese and 1/2 teaspoon mustard and stir well. Pour sauce over meat balls and bake in oven about 15-20 minutes.

Rice Bubble Biscuits

1/2 cup butter or margarine, 1 cup rice bubbles, 1 cup sugar, 1 well beaten egg, 1 cup S.R. flour, 1/2 tsp. vanilla.

Method: Cream butter and sugar, add egg and beat well. Add rice bubbles and flour and vanilla. Drop tsp. on slide and bake in mod. oven for 10 mins.

Date Balls

125g butter
1 cup brown sugar
500g dates
1 cup coconut
4 cups Rice Bubbles
Extra coconut for coating

Method: Boil butter, sugar and chopped dates for 3 minutes. Remove from heat and stir in coconut and Rice Bubbles. When cool, roll into balls and coat in extra coconut. Store in refrigerator.

Rice Bubble Sundae

1&1/2 cups rice bubbles, 3/4 cup brown sugar, 1/4 cup butter (melted), 1 cup flaked coconut, 1/2 cup chopped walnuts, ice cream topping, 2 trays vanilla ice cream.

Method: Lightly mix rice bubbles, sugar, butter, coconut and walnuts. Put half mixture into greased 8 x 8 inch tin. Spread evenly with slightly softened ice cream. Sprinkle with remaining rice bubble mixture. Press down lightly. Cover and freeze until firm. Cut into squares and serve with topping syrup.

Coconut Whispers

2 oz butter, 3 oz sugar, 1 egg, 1 cup coconut, 1/2 cup flour, 1 cup rice bubbles.

Method: Cream butter and sugar, add egg and dry ingredients. Drop tspn on tray. Bake in moderate oven for 15 to 20 minutes.

Honey Bubble Fingers

4oz margarine or butter
2 tablespoons honey
1/2 cup coconut
4 oz sugar
4 cups rice bubbles
1 cup peanuts

Method: Simmer butter, sugar and honey for 5 minutes. Add rice bubbles, coconut and peanuts and mix well. Press into slab tin. Sprinkle with a little extra coconut. Cut into fingers while still warm and allow to set before serving.

Peanut Scrambles (uncooked recipe)

8 oz peanuts, 8 oz sultanas, 4 oz drinking chocolate, 4 oz icing sugar, 2 cups rice bubbles, 8 oz copha.

Method: Melt copha and add other ingredients. Drop in clusters on greased paper and leave to set.

Peanut Balls

1 cup Peanut Paste
1/3 cup Margarine
1 cup icing sugar
1&1/2 cups Rice Bubbles

Method: Mix together peanut paste and margarine, fold in icing sugar and rice bubbles. Roll into small balls and refrigerate. Balls can be dipped in melted chocolate.

Cheese and Rice Bubble Nibbles

1 cup Rice Bubbles
1 cup plain flour
pinch cayenne pepper
1 cup grated mature cheese
4oz margarine

Method: Mix dry ingredients together. Blend with melted margarine. Roll into marble sized balls. Bake at 180C for 15-20 minutes.
