3 slices thin buttered toast, crusts removed
2 tablespoons cream cheese
1 tomato sliced
1 cucumber sliced
3 rashers bacon, crisply fried
large lettuce leaves, washed & dried
slices of chicken or turkey with stuffing or relish
Method: Start with 1 slice of toast, spread with half cream cheese & follow with tomato & cucumber slices. Add rasher of bacon & lettuce. Another piece of toast spread with cream cheese, then thin slices of turkey or chicken with stuffing. Top with tomato, cucumber & lettuce & last piece of toast. Accompany with cranberry sauce or pickles.

Cranberry and Apple Chutney
500 gm Granny Smith apples, peeled, cored, chopped
2 cm piece root ginger, peeled, grated finely
1 teaspoon olive oil
1 small onion, chopped fine
1/2 teaspoon allspice
1/2 cup cranberry juice
1/2 cup water
150 gms craisins/dried cranberries
Method: Heat oil in saucepan. Add onion and ginger. Cook 5-6 minutes stirring occasionally until onion is clear. Add apple, spice, cranberry juice and half the craisins/dried cranberries. Cook at medium heat, covered, 10-15 minutes until apple is soft. Add remaining craisins/dried cranberries. Cook covered for a further 5-10 minutes or until mixture thickens. Spoon into a clean jar and seal. Serve with roast pork, chicken or turkey, or in a ham, chicken or turkey sandwich.

Cranberry Orange Cups
4 medium-sized oranges
1 small (8 0z.) can whole berry cranberry sauce
Method: Cut oranges in halves across segments, and scoop out flesh with a spoon. Remove pith from orange segments and discard, with pips. Place orange flesh in a basin, add contents of can of cranberry sauce; mix together. Pile into orange cups. Serve around turkey.

Quick Tip - Cranberry Sauce
Lovely variation on pre-prepared sauce. Buy two jars, add one or two table spoons of lemon juice and serve in a smart bowl.
