Whole Lemon Pudding

Cream together 2 dessertspoonsful butter and 2 tablespoonsful sugar. Add 1 egg and beat well. Then add enough S.R. Flour to make a dough of scone consistency. Line a pudding basin about 1/2" thick with dough, leaving a piece for the top. In the centre place 1 whole lemon (which has been thoroughly pricked all over) and pour over it 3/4 cup of sugar, 1 cup water and 1 dessertspoon butter. Cover with the rest of the dough, tie down securely with greased paper or cloth and steam for 2&1/2 hours. Unusual pudding of marmalade flavour with lemon-butter filling. According to the size of the basin, this recipe may be doubled or trebled.

Quick Christmas Pudding

6 oz self-raising flour
1 jar Robertson's English mincemeat

Method: Mix together with one beaten egg and a little milk.

Place in greased basin and stand in boiling water. Steam 2-2&1/2 hours. Serve with custard.

Steamed Nut Loaf

Put in saucepan --
2 cups milk
3 tablespoons Golden Syrup (heaped)
2 tablespoons butter

Warm and melt. Take from stove and add 1 level teaspoon carb. soda. Let cool, then add 3 good cups S.R. flour, 2 cups fruit.

Put into greased soup tins (1/2 fill). Cover with Alfoil. Secure with rubber band. Steam for 1&1/2 hours. Can be served hot with custard as a pudding.

Eggless Plum Pudding

1 cup plain flour, 1/2 cup sugar, 1 level tsp. carb soda. 2 oz. butter, 1/2 cup currants. 1/2 cup sultanas or raisins, 1 cup boiling water.

Method: Mix together flour, sugar and fruit. Pour 1/2 cup boiling water on to butter and dissolve soda in 1/2 cup boiling water. Mix all ingredients together and steam for 2 hours.

Salmon or Tuna Mould

1 tin salmon or tuna, 1 cup mashed potatoes, 1 egg, boiled rice, curry sauce, pepper and salt.

Bone the salmon, add potatoes and beaten egg, pepper and salt to taste. Put mixture in pudding basin and steam 3/4 hour. Turn it out, put border of rice round and pour curry sauce over.

Curry sauce: 1 tbsp. butter, 1 tbsp. flour, 1 heaped tsp. curry powder, 1 cup milk. Melt butter, blend in flour and curry, add cup of milk and stir over fire until it thickens.

Egyptian Pudding

1 cup plain flour, 1/2 cup sugar, 1 tsp. carb. soda in 1/2 cup milk, 1 tbsp. jam, 1 small tbsp. butter, 1/2 cup of dates or sultanas, 1/2 tsp. spice.

Method: Mix together and steam for 2 hours.

Black and White Pudding

1/2 cup sugar
A small 1/2 cup milk
1&1/2 teaspoons baking powder
1 tablespoon cocoa
1 egg
1 dessertspoon butter
1 cup flour
1/2 teaspoon vanilla
1 saltspoon cinnamon
Salt

Method: Cream butter and sugar and add egg, milk and vanilla. Divide batter and add cocoa and cinnamon to one half. Place alternately in a buttered mould and steam for 1 hour. Serve with chocolate sauce or cream.

Steamed Pudding (No butter, eggs, sugar or flour)

1 cup mixed fruit
1 cup breadcrumbs
1/2 teaspoon carb.soda, mixed in 1/2 cup milk
1 mashed banana

Method: Put all in basin, steam 3 hours. Delicious.

Economical Plum Pudding

2 large cups fresh breadcrumbs, 3/4 cup sugar, 1 cup mixed fruit, 1 tsp mixed spice, 1 tsp carb. soda, 1/2 cup milk, 1 Tbls butter, 1 egg, 1/2 tsp lemon essence, 1 Tbls sweet sherry.

Method: Combined dry ingredients other than carb. soda which is dissolved in milk, then added. Melt butter and add to mixture. Beat eggs and mix in with all ingredients. Place in a greased steamer, cover and steam for 1&1/2 hours.

Blow Away Banana and Honey Pudding

1 Tbls honey, 1 Tbls butter, 1/2 cup milk, 1/2 tsp carb. soda, 1 cup SR flour, sliced banana, 1 extra Tbls honey.

Method: Beat butter and 1 Tbls honey to a cream, add milk to which carb. soda has been added. Lastly stir in flour. Grease basin and add extra honey. Cover bottom with sliced banana. Pour the pudding mixture over this. Steam for 1 hour.

Easy Pudding

1 dstspn. dripping
1/4 tspn. carb. soda
2 tbspns. currants
3/4 cup milk
2 tbspns. sugar
1/4 tspn. nutmeg
3/4 cup S.R. flour

Method: Cream dripping and sugar, add nutmeg and currants. Sift carb. soda with flour, add to other ingredients, stir. Mix with milk. This is a thin mixture. Tie in cloth and boil 1&1/2 - 2 hours. Can also be cooked in pudding basin.

Canary Pudding

4 oz butter
3/4 cup sugar
2 eggs
1/4 pint milk
2 cups S. R. Flour
pinch salt
1 dstspn lemon juice

Method: Cream butter & sugar, add beaten eggs and lemon juice, then add flour with salt & milk alternately. Steam for 1&1/2 - 2 hours. Serve with hot honey or jam spooned over pudding.

Banana Plum Pudding

2 large cups breadcrumbs
2 large cups mixed fruit
2 medium bananas
small cup sugar
1 teaspoon carbonate soda
1 small cup milk

Method: Mash bananas and mix with fruit and crumbs. Dissolve soda in milk and mix all well together. Steam 2&1/2 hours and serve with custard sauce.

Steamed Nut Loaf

2 cups Allbran
2 tablespoons golden syrup
1.1/2 cups sultanas
2 cups milk
2 cups plain flour
1 cup sugar
2 teaspoons [bi]carb soda

Method: Soak Allbran, golden syrup and milk overnight. Next day mix in sugar, flour and sultanas and place in four greased soup tins and cover with alfoil. Place in a large saucepan about 1/4 filled with boiling water and steam for 1.1/2 hours.

Easy Dinner

1 lb steak
3 carrots
1 large onion
pkt frozen peas
1 tbls Worcestershire sauce
1 tbls tomato sauce

Method: Cut meat into small pieces, roll in seasoned flour. Slice onion, peel and slice carrot. Place sauces in bottom of pudding basin. Add layer of meat, then layer of carrots, onion and peas. Fill basin with layers of meat, then vegetables, finishing with meat. Do not cover basin. Place in a saucepan of boiling water, put lid on saucepan, boil for 3 hours. Condensation falling makes gravy. Serve with mashed potatoes.
