Colours of Christmas Stir-Fry

2 tablespoons oil
2.5cm piece fresh ginger, peeled & grated
1 clove crushed garlic
1 red chilli, de-seeded & chopped
1 red pepper, de-seeded & cut into strips
175g young turnips, trimmed & cut into wedges
350g broccoli flowerettes & strips of stalks
250g cooked sausages, sliced
6 tablespoons turkey or chicken stock
2 tablespoons sherry
2 tablespoons soy sauce
1 level teaspoon brown sugar
350g cooked potatoes, cut into chunks
6 spring onions, trimmed & chopped
salt & pepper to taste

Heat oil in a large pan & fry ginger, garlic & chilli over a medium heat for one minute - but do not burn. Add pepper strips, turnips, broccoli stalks & stir-fry for 5-6 minutes. Add slices of sausage, broccoli flowerettes, stock, sherry, soy sauce & sugar. Simmer for 3 minutes. Finally stir in potato, spring onion & cook until heated through. Season well. Serve immediately.

White Vegetable Soup

1 pint of stock
1 pint of milk
1 table-spoon of flour
1/2 carrot
1/2 turnip
1/2 a leak [sic] or a small onion
Butter
Grated cheese

Method: Mince or dice the vegetables, simmer in the stock. When the vegetables are tender, add the milk, in which the flour has been mixed smoothly. Stir till it thickens. Just before serving add butter, chopped parsley, and a little grated cheese.

Julienne Soup

4 cups stock
2 small carrots
1 turnip
2 onions
1/2 cup green beans or peas
Salt and pepper to taste
Parisian essence to colour

Method: Slice the onions finely, cut carrots and turnip into matches and simmer in the stock till tender. Add the beans or peas and salt and pepper to taste. Colour with Parisian essence. Serve with sippets of toast.

Frimsel Soup

3 or 4 quarts [3 or 4 lts.] stock
2 turnips
3 carrots
1 onion
1 head celery
1 bunch mixed herbs
1 lb. [500 gm.] frimsels
1 pinch saffron

Method: Cut the vegetables as for Julienne soup, boil well in the stock until cooked. Half an hour before serving add the frimsels and saffron.

FRIMSELS: Beat an egg well with a pinch of salt, then sufficient flour (wholemeal) to thicken it enough to roll out. Roll as thin as a wafer, allow to dry, then fold and cut as thin as vermicelli; add these to soup.

Apple and Turnip Salad

2 turnips cooked and chopped
2 red apples cubed
1 stick celery thinly sliced
1/2 cup walnuts
French dressing

Method: Mix the warm turnips with the dressing and allow to cool. Stir in the remaining ingredients.

Vegetable Soup

lamb shin bone
1/2 packet split peas
3 litres water
4 medium onions
salt and pepper
3 carrots
5 stalks celery
2 parsnips or turnips
1 can commercial soup

Method: Simmer peas, bones and sliced onions in a covered stockpot until peas are tender. Dice other vegetables and add commercial soup then simmer for 3/4 hour.

Horseradish (& Mock Horseradish) Sauce

Wash well and scrape 1/2 kg horseradish and put through a mincer. Add 1 tin sweetened condensed milk, pepper, salt and mustard to taste and about one cup of vinegar.

Mock Horseradish Sauce: A white turnip scraped and mixed with a little mustard, vinegar and milk is an excellent substitute for horseradish sauce.
