1/2 lb. liver
1 lb. potatoes
1 teaspoon flour
1/2 teaspoon sage
Seasoning
Onions and sage
Method: Wash the liver and cut it into slices; sprinkle with flour, salt and pepper; place in a pie-dish. Add a layer of chopped onion and sage. Pour in water to half fill the dish. Slice the potatoes and put them on top. Bake for 45 minutes.

Liver with Port Wine
1 lb lamb's fry
2 onions
flour
salt & pepper
thyme - 1 tspn
butter or oil for frying
1/2 cup port
Method: Slice lamb's fry thinly and coat with flour. Fry sliced onion until golden brown. Fry lamb's fry slices on each side. Season. Add port. Cook until tender in covered pan or put into casserole in oven for about 30 mins.
(Liver is nicer if cooked when fresh and has not been frozen.)

Welsh Faggots
1&1/4 lbs pigs liver
4 oz white bread crumbs
3 teaspoons salt
1 pint boiling water
2 large onions
3 ozs suet
2 teaspoons dried sage
Method: Mince liver and suet and onion. Add crumbs, salt, pepper and sage. Place tablespoons of mixture in greased roasting dish. About 15 faggots and cook in oven 355F for 35 minutes. Pour boiling water round faggots and allow gravy to form. Serve hot with choice of vegetables.

Cheng Tau, Hu Chi (Chicken Liver and Green Pea Soup)
Four Persons
3 chicken livers.
1 tin green peas.
1 tablespoon chopped mushrooms.
1 teaspoon ginger.
1 small tin bamboo shoots.
3 giblets.
1 tablespoon soya sauce.
1 piece of lean pork and a few bones.
Method: Make a strong stock by boiling any bones and a piece of lean pork. Chop up chicken livers, giblets, mushrooms, ginger, and bamboo shoots. Put in a deep pan, pour in stock through a strainer, strain peas and add, with soya sauce, pepper and salt, and bring to boil. Serve in soup-bowls.

Sweet and Sour Chicken Livers
Six Persons
1/2 lb. chicken livers and giblets.
1 large cucumber.
1 onion.
Vinegar, salt and pepper.
1 tablespoon cornflour.
1/2 teaspoon Ve-tsin (gourmet powder).
Method: Quarter cucumbers lengthwise, and slice diagonally. Soak cucumber slices in a little vinegar. Fry onions, livers, and giblets. Remove from oil as soon as cooked. Put cucumbers in remaining oil and fry till three-quarters cooked. Add salt and pepper. Blend cornflour and Ve-tsin with a little water. Mix livers and giblets in pan. Pour in smooth paste of flour and cook for 2 minutes.

Homestead Fry
This uses Continental rich beef soup with noodles.

3 rashers of bacon
1 chopped onion
1 pkt Continental rich beef soup with noodles
1 tomato
parsley
Method: Line base and sides of a casserole dish with slices of raw potato. Prepare lamb's fry, dust with flour, and fry until browned, then fry bacon and onion. Drain and place in casserole with finely chopped parsley and sliced tomato. Cook soup 5 mins. with 1/2 pint water and pour on top. Cover and bake in moderate oven for 45 mins.

Lamb's Fry Breakfast Sausage
1 lamb's fry
1 lb mince
2 cups cooked rice (less if desired)
1/2 tsp mixed herbs
1/2 tsp mixed spice
salt and pepper to taste
Method: Boil mince in a little water. Boil lamb's fry whole until meat darkens and sets. Allow to cool and mince. Add to lamb's fry, the mince meat, cooked rice and seasonings. Place in pie-dish, dot with butter and bake very slowly (250 degrees) for 1 hour. Can be eaten cold on toast or heated with a little water and served on toast.
