One and a half cups flour, 1&1/2 cups clean bran, 3 teaspoons cream of tartar, 1 teaspoon carb. soda, pinch of salt. Sift all dry ingredients, except bran, twice, and mix well together. Add 1 egg (well beaten) and 1&1/2 cups fresh milk. Make into a very light dough and touch as little as possible. Roll out, cut into shapes and bake in a rather quick oven.

Rainbow Sponge
4 eggs, pinch of salt, 3/4 cup castor sugar, 1 cup plain flour, 1/2 teaspoon cream of tartar, 1/4 teaspoon carb. soda, 3 tablespoons milk, 1 teaspoon butter, 1 scant, dessertspoon cocoa blended with one extra tablespoon warmed milk, cochineal, 3 tablespoons mock cream, warm icing, grated chocolate to decorate.
Method: Separate whites from yolks of eggs, beat whites stiffly with salt. Gradually add sugar and continue beating until all sugar is dissolved. Add egg-yolks. Fold in sifted flour, cream of tartar, and soda. Lastly, fold in hot milk and melted butter. Grease 3 sandwich tins (7 ins.). Pour one-third of mixture in one tin. Colour remainder pink and pour half into second tin. Fold blended cocoa into balance and pour into third tin. Bake 20 to 25 minutes in moderate oven. Join together with mock cream. Ice top with pink icing and decorate with chocolate.

Stuffed Monkeys
Paste: Two cups flour, salt, 2 level teaspoons cream of tartar, 1 level teaspoon soda, 2 ozs. butter, 2 tablespoons sugar, 1 egg. Sift flour with rising. Rub in butter, add sugar, and mix into a stiff paste with well-beaten egg. Roll out about quarter of an inch, cut into 3-inch squares.
Mixture: Chop up 1 cup seeded raisins, 1 tablespoon mixed peel, 1 tablespoon sugar, 1/4 cup sultanas, 1 teaspoon ground cinnamon. Mix all together, and put on dessertspoonful in each square of paste. Fold over and pinch the edges together. Brush over with milk and dust a little sugar on each, and bake in a moderate oven till a golden brown.

Blowaway Sponge
4 eggs
3/4 cup sugar
3/4 cup cornflour
2 dessertspoons plain flour
1/2 teaspoon cream tartar
1/4 teaspoon carb soda
Method: Beat egg whites and sugar until meringue consistency, then add egg yolks one at a time. Sift all flours together and add to egg mixture. Bake at 220C (425F) for 12 minutes. This mixture makes three sponges in 17cm (7") tins.

Cream Lilies
4 Eggs
1 cp. Sugar
1 cp. Flour
1 tsp. Cream of Tartar
1/2 tsp. bi-carbonate of Soda
Method: Beat eggs and sugar to a thick froth. Sift in remaining ingredients, and mix well. Spoon onto buttered paper on an oven tray, a small tablespoon for each lily. Bake in moderate oven about 8 minutes. When cooked, roll quickly in the shape of a lily, and when cold fill with whipped cream, adding a spoonful of bright jelly on top. I always roll each lily straight from the oven, and I leave them there with the door open until each is rolled in its turn. They are easier to handle this way.

Damper
4 cups plain flour
1 tspn. salt
1 tspn. carb. soda
2 tspns. cream of tartar
Water
Method: In a large bowl combine flour, salt and risings. Mix well. Slowly add enough water to make a soft dough. Knead on a lightly floured board. Shape into a flattish circular loaf. Grease a camp oven and place in loaf. Let stand for 10-15 mins, then cover and place over fire. Cover lid with hot ashes. Cook for 30-35 mins or until it sounds hollow.

Apricot Cloud
3 egg whites
6 tbsp sugar
1&1/2 tsp lemon juice
3/8 tsp salt
3/8 tsp cream of tartar
3 cups pureed apricots (canned)
Sauce:
3 egg yolks
3 tbsp sugar
2 tbsp lemon juice
3 tbsp evaporated milk
Method: Beat eggs whites, salt, cream of tartar until doubled in volume. Beat in sugar gradually until meringue forms soft peaks. Fold in apricots and lemon juice. Spoon into dishes. Top with sauce. SAUCE: Beat egg yolks and sugar until thick. Fold in lemon juice and evaporated milk.

Pineapple with Meringue Topping
240g canned pineapple pieces
1 egg white
2 tsp cream of tartar
few drops each of orange and coconut flavouring
pinch salt
Method: Divide pineapple pieces into 2 small oven-to-table casseroles. Sprinkle each with flavourings. In medium bowl beat egg white with sugar, cream of tartar and salt until it stands in peaks. Pile half of the mixture on top of each portion of pineapple. Bake at 350 degrees F / 180 degrees C for 10-12 mins. or until topping begins to brown. Serves 2.
