Scramble Pudding

1/2 lb. Flour
1/2 lb. Bread crumbs
1/2 lb. Suet
1/2 lb. Raspberry Jam

Mix all well together with a little milk; boil 2 hours.

The Savoury Balls

1/2 lb self-raising flour
1 teaspoon chopped parsley
1/4 teaspoon salt and pepper
2 to 3 oz. finely chopped suet
A pinch thyme and sage
Water to mix

Method: Mix all the dry ingredients and make into a light dough with cold water. Divide into small balls, roll each in flour, and drop into the boiling stew. The same balls may be cooked with a boiled leg or shoulder of mutton. For a change, add a small minced onion to the above ingredients.

War-time Plum Pudding

Half oz. flour, 6 ozs raisins, 6 ozs currants, 4 ozs suet, 4 ozs brown sugar, 4 ozs mashed carrot, 4 ozs mashed potatoes, 1 tablespoon treacle, 1 oz. lemon peel, 1 oz. citron peel. Boil as usual for a pudding of this size.

Welsh Faggots

1&1/4 lbs pigs liver
4 oz white bread crumbs
3 teaspoons salt
1 pint boiling water
2 large onions
3 ozs suet
2 teaspoons dried sage

Method: Mince liver and suet and onion. Add crumbs, salt, pepper and sage. Place tablespoons of mixture in greased roasting dish. About 15 faggots and cook in oven 355F for 35 minutes. Pour boiling water round faggots and allow gravy to form. Serve hot with choice of vegetables.
