Tuna Pie

Combine 1&1/2 cups crushed cheese biscuits (Golden Cheese) and 2 oz melted marg. Press into pie plate, saving few crumbs for topping.

Filling:- 8 oz can tuna, 1 cup carnation milk, 2 beaten eggs, 1/2 cup grated cheese, 1 onion finely chopped and sauteed in butter, green pepper (optional). Combine and pour into tart case. Sprinkle with crumbs. Bake mod oven 30 mins until set.

Curried Meat Loaf

3 plums
1 T plum jam
750 g hamburger steak
1 T coconut
2 T sultanas
1 grated onion
2 t curry powder
1 cup breadcrumbs
2/3 cup evaporated milk
1 beaten egg
salt & pepper

Method: Simmer plums in water until tender, remove skin & chop flesh into small pieces. Put meat, plums, jam, coconut & sultanas into a bowl. Fry onion until soft, add the curry powder, stir over low heat for a minute, add to meat. Stir in crumbs, milk, beaten egg, salt & pepper. When blended, turn into a meat loaf tin & bake in a moderate oven about 1 hour. Leave in tin for 5 mins, pour off fat & turn out. Cool loaf & chill well, serve with fruit chutney & rice salad.
Serves 6-8.

Savoury Tripe

1&1/2 lb tripe
1/2 oz butter
1 onion
2 tablespoons flour
1 cup water
1 cup evaporated milk
1 carrot
1 chicken stock cube
3 sticks celery
salt and pepper
1 dessertspoon Worcestershire sauce

Method: Cut tripe into 1 inch pieces, place in saucepan. Cover with water, add little salt; simmer one hour. Drain. Melt butter in saucepan. Fry chopped onion 2 minutes. Add flour, cook few minutes, remove from heat, add water, milk and crumbled stock cube. Return to heat, stir until sauce boils and thickens. Cook diced carrot and celery until tender, drain and add with tripe to sauce. Stir in Worcestershire sauce.

Serves 4.

Bean and Ham Cream

6 oz. packet deep frozen French beans
1 teaspoon flour
1/4 pint cream (or evaporated milk)
Few chives
1 teaspoon paprika
1 oz. butter
1/4 cup milk
4 oz. cooked ham
Salt and pepper

Method: Cook the beans as directed on the pkt. Melt the butter in a saucepan, add the flour and milk, blend thoroughly, stir in the cream, cook until a rich thick sauce. Chop ham in chunky pieces and fold into the cream sauce with chopped chives. Season with salt and pepper. Pour over the beans, sprinkle with paprika and serve with fingers of toast. Time 15 minutes.

Quiche Magnifique

8" (20cm.) pastry lined pie plate
1 can evaporated milk or 1 carton of cream
1 cup milk
3 eggs
1 pkt. French onion soup

Method: Combine last four ingredients, beat well. Pour into pie plate, bake 200°C for 10 mins. then reduce heat to 180°C for 15 mins. or until cooked.

Tuna and Asparagus Mornay

Equipment Needed
Saucepan to cook rice
Casserole dish
Can opener

Preparation Time: 15 minutes
Cooking Time: 20 minutes

Ingredients
1 large tin Tuna in brine
1 cup cooked Rice
1/2 cup grated Cheese
1 small tin Evaporated Milk (1/2 cup)
1 Onion chopped
1 tin Cream of Asparagus Soup
1 small tin Sweet Corn Kernels
Crushed Cornflakes
Small amount of Butter

Method: Place the cooked rice in a casserole dish[.] Mix all other ingredients[,] pour over rice and sprinkle with crushed cornflakes and dobs of butter. Bake 20 minutes in oven at 180C.

Pineapple and Bacon Dip

4 oz pkt cream cheese, 1 Tbls undiluted evaporated milk, 2 Tbls crushed pineapple, 1-2 Tbls finely diced cooked bacon, salt, pepper

Method: Mix together until creamy, the cream cheese and evaporated milk. Add the savoury ingredients and season with salt and pepper.

Quiche

4 slices of bacon on the base of a dish, add small tin of drained pineapple, some grated cheese. Beat 6 eggs and 1 can of evaporated milk and pour over cheese. Bake for 45 mins. (or until set) in moderate oven.

Almond Peach Torte

Ingredients: 1/2 pkt plain sweet biscuits, 4 oz margarine.

Filling: 1 pkt lemon jelly crystals, 6 oz peach nectar (juice from preserved canned peaches), 1 pkt Philadelphia cheese, 1/2 cup sugar, 1/2 tsp almond essence, 1 large can chilled evaporated milk, peach slices, 3 Tbls lemon juice.

Method: Make crumb crust and press into container. Dissolve jelly crystals in hot peach juice. Cool. Cream cheese, almond essence and sugar until fluffy. Add jelly and when partially set, whip iced evaporated milk and lemon juice in with this mixture. Fold in drained, sliced peaches. Pour into casing, chill and decorate with cream and almonds.

Pumpkin & Apple Vichyssoise

750g (1&1/2lb.) butternut pumpkin, peeled, seeded and cut into small pieces
250g. (8oz.) peeled and chopped potato
1 lge. onion
4 cups boiling water
1 Maggi chicken & garlic stock cube
2 green apples, peeled, cored and sliced
1 cup Carnation Evaporated milk
1/4 tspn. nutmeg

Method: In large saucepan combine pumpkin, potato, onion, boiling water and stock cube. Heat until boiling. Reduce heat and cover. Simmer for 15 mins. Add apples, simmer 10 mins. more. Cool slightly. Puree in blender or processor until smooth. Return to saucepan stir in Carnation milk and nutmeg. Do not boil. Serve. Garnished with a pinch of nutmeg, dob of cream and a sprinkling of chopped parsley.

Dessert from the Shelf

1 small tin sliced peaches or apricot halves, 1/2 cup cream or evaporated milk, 3/4 cup plain flour, 1/2 cup brown sugar firmly packed, 1 level tsp cinnamon, pinch salt, 2 oz butter or margarine.

Method: Drain fruit. Arrange in 9 in. tart plate, pour milk or cream over it. Sift flour, salt, sugar and cinnamon. Rub butter in lightly with tips of fingers. Sprinkle top over fruit. Bake in moderate oven until crumbs are brown - about 15 mins. Serve while still warm with cream.

Seafood Cocktail Sauce

1 tin whipped evaporated milk
juice 4 lemons
1/2 tspn salt
pinch cayenne pepper
pinch nutmeg
2 tabspn Worcestershire sauce
3 packets tomato puree
(cream can be added)

Mix all together.

Sunday Night Slice

1 lb. [500 gm.] minced steak
1 small onion, chopped
1/2 cup evaporated milk
3/4 cup All-Bran or Bran Buds
1/4 cup warm water
1 green capsicum, cut into rings
2 tomatoes, sliced
1/4 lb. [125 gm.] cheddar cheese, grated
1 egg, beaten
1/2 teaspoon salt
freshly ground pepper

Method: Combined minced steak, onion, milk, egg, salt and pepper and mix thoroughly. Soften All-Bran or Bran Buds in the water and add to mince mixture. Spread evenly into a 10" x 7" (25 cm. x 18 cm.) baking pan. Place capsicum rings and tomato slices on top and sprinkle with cheese. Bake in a moderate oven, 180C gas, 190C electric (350F gas, 375F electric) for 35 minutes or until mince is cooked. Cut into squares and serve on hot buttered toast or with side salad. (6 servings)

Lemon Crunch Ice Cream

1 tin chilled Carnation milk
2 eggs
1/2 teaspoon salt
1/3 cup lemon juice
1/2 cup castor sugar

Topping:
1/2 cup crushed cornflakes
2 tablespoons melted butter
5 tablespoons castor sugar

Method: Whip milk until thick, add lemon juice and whip. Beat eggs, salt and sugar in another bowl. Fold into milk mixture. Pour into container to freeze. Melt butter and sugar together, add cornflakes and sprinkle on top and freeze.

Celebration Cassata (Heavenly)

2 small bricks ice cream (1 white, 1 chocolate), 2 oz glace cherries, 1 oz mixed peel, 2 oz chopped nuts, 2 Tbls liqueur if desired, 6 chocolate peppermint biscuits, 1 12 oz can chilled Ideal milk, 1/4 cup lemon juice, 1 small can frozen orange juice, 1/2 cup sugar.

Method:
Layer I. Line plastic bowl or pudding basin with chocolate ice cream and place in freezer to harden.
Layer II. Whip Ideal milk very stiff. Gradually add lemon juice and sugar. Fold in frozen orange juice (softened). Partially freeze and cover chocolate ice cream.
Layer III. Crush biscuits, chop nuts and fruit. Mix through softened white ice cream and cover Layer II. Freeze overnight.

Serve in wedges or serve the pudding whole at the table, having covered the pudding with whipped cream and decorated with red and green cherries.

Ham Bake

2 cups cooked rice
1/2 cup evaporated milk
1/2 cup grated cheese
2 cups chopped ham
1 tbspn. chopped onion
1 tin cream of chicken soup

Method: Combine all ingredients. Cover with cornflakes mixed with 3 tbspns. butter. Heat through slowly approx. 45 mins.

Milk Cake (Uncooked)

14&1/2 oz. can Carnation milk, chilled
2 teaspoons vanilla essence
7 teaspoons gelatine
1/2 cup boiling water
4 tablespoons sugar
Coconut, fruit and cream

Method: Butter 2 sandwich tins and sprinkle with coconut. Beat milk to thicken, add vanilla, sugar and gelatine (dissolved in 1/2 cup boiling water). Pour mixture into tins and set in refrigerator.

Turn our [sic] 1 cake, put fruit and cream on top - repeat with second cake.

Heavenly Dessert

1 tin evaporated milk, chilled
1 lemon jelly
1 pkt chocolate ripple biscuits
juice of an orange
1 small tin pineapple pieces

Method: Make juice of pineapple and orange up to 1/2 pint with water and bring to the boil. Add jelly, cool and partly set. Whip milk until thick and combine with jelly. Line large dish with crumbled biscuits. Cover with mixture, then top with remainder of crumbs and pineapple pieces. Serves 8.

Rice and Salmon Baked

1 tablespoon butter
1 small can salmon
1.1/2 tablespoons flour
1/2 cup grated cheese
1 cup cream of onion soup
2 cups cooked rice
3/4 cup evaporated milk
1/2 cup breadcrumbs tossed in melted butter

Method: Melt butter, add flour, blend well and cook 2-3 minutes. Mix together onion soup and milk, add to pan and stir till boiling. Fold in flaked salmon and liquid from can, rice and cheese (save some for topping), turn into casserole and sprinkle with cheese. Put bread crumbs in border around dish. Bake in moderate oven 180C (350F) till cheese bubbles and fish is heated through.

Fe[i]joa Cake

2 x 8" sponge tins, thickly greased with butter. Coat sides and bottom with cocoanut.

Beat 1 tin Carnation milk with 2 teaspoons vanilla until thick, add 4 tablespoons castor sugar and beat.

Dissolve 7 teaspoons gelatin in 1/2 cup boiling water, add to mix and beat. Add pulp of several Fe[i]joa and set.

Make lemon jelly with juice from tin of tropical fruit salad. Add a little of the fruit.

Join with cake mixture and cover with cream.
