Pineapple Slice

Method: Line a slice tin with Coffee Biscuits. Mix 1 tin Condensed Milk, one 15 oz (500gm) tin of crushed Pineapple (drained), 2 oz Lemon juice, 4 oz melted Copha and 2 oz Passionfruit pulp.

Spread evenly over Biscuits and place another layer of Biscuits on top of filling.

May be iced with Chocolate Icing.

Pineapple Rice Cream

Method: Wash 1/3 cup Rice and slowly bring to the boil in 2&1/2 cups Milk. Cover until Milk is absorbed (approx. 45 minutes). Remove from heat and add 3 tbsp Sugar and 1 tsp Vanilla.

When cold, fold in 1 drained tin of crushed Pineapple and 300 mls Whipped Cream. Refrigerate and sprinkle with Brown Sugar or Cinnamon.

Eggless Jubilee Cake

Method: Pour 1 cup boiling Water over 3/4 cup Sugar and 1 cup mixed Fruit. Let stand for 10 minutes. Add 2 cups SR flour, 1 tsp Cinnamon.
Bake in a greased orange loaf tin (or log) for 30-35 minutes.
Ice while still warm - Lemon-flavoured is nice.

Oriental Delight

2 oz Butter
1/2 cup sugar
3/4 cup SR Flour
1 tbsp Cocoa
4 tbsp Milk
1 tbsp Coffee Essence
1 cup Dates
1/2 cup Coconut
2 Eggs
1/2 cup Walnuts

Method: Beat Butter and Sugar, add Eggs, Milk, Coffee, Coconut, Cocoa, Flour, Dates and Walnuts.

Press the mixture into a greased, shallow tin and bake in a moderate oven (approx. 180°C) for 25-30 minutes.

Ice with Chocolate Icing, sprinkle with chopped Nuts

When cold, cut into fingers or squares.

Celery Mornay

2 cups finely chopped Celery
1 dsp chopped Onion
1 tbsp grated Cheese
1 dsp Butter
Salt & Cayenne Pepper to taste
2 cups White Sauce

Method: Fry the Celery and Onion in Butter, add the White Sauce and seasoning. Mix, place in a casserole dish, sprinkle with Cheese and brown in oven.

Pork Capricorn

1lb boned Pork
1 Green and 1 Red Pepper
1 medium sized Onion (chopped)
1 Carrot, cut into thin strips 1&/2 inches long
1-2 tbsp cooking Oil
3/4 cup cooked Pineapple pieces
3/4 cup White Vinegar
3/4 cup Brown Sugar
3/4 pint stock (Chicken cube)
3 tbsp Soy Sauce
1 cup Raisins

Method: Cut the Pork into 1 inch cubes, fry in hot Oil until evenly browned.
Reduce heat and pour off excess fat. 
Add the prepared Pepper, Onion, Carrot, Vinegar and Sugar.
Add the stock and simmer until tender.
Lastly add the Soy Sauce, Raisins and Pineapple pieces.
Thicken the mixture with Cornflour and boil for 3 minutes.
Serve with boiled Rice.

24 Hour Salad

In a Lasagne dish make layers of torn Lettuce or Spinach, chopped Celery, Spring Onions, frozen Peas, Broccoli or Cauliflower.

Spread an Egg Mayonnaise over the top and cover with coarsely grated Mozzarella Cheese.

Sprinkle with finely grated Parmesan Cheese.

Cover with cling-wrap and refrigerate for 24 hours. 

Serve covered with crisp Bacon pieces, Parsley and chopped, boiled Egg.

Ginger Cotton Tops

8 oz Ginger Biscuits (crushed)
2 tbsp Golden Syrup
4 oz Sultanas
3 oz melted Copha

Method: Mix well and place in tin.

TOPPINGS:
4 oz Icing Sugar, 2 oz melted Copha and 1 tsp grated Lemon rind. Mix well and spread on top of biscuit mixture. Set in 'fridge.

Chicken Noodle Savoury

1 pkt Chicken Noodle Soup
1lb Minced Steak
1 Onion (chopped)
3/4 cup uncooked Rice
1 pint Water
Pepper

Method: Combine all ingredients in a casserole dish, cover, and cook in a moderate oven for 1 hour.

Vegetarian Cauliflower Snow

1 large cauliflower
1 large onion, sliced
2 oz. butter
2 tomatoes, skinned and sliced
1 oz. flour
1/2 pint milk
Salt and pepper
6 oz. cheddar cheese (grated)
4 eggs, separated

Method: Cut cauliflower in fleurettes, cook in boiling salted water, stems down, 5-10 mins. Saute onion in 1 oz. butter until soft; add tomatoes and cook 2-3 mins. Meanwhile, make sauce with remaining butter, flour and milk, season and add 4 oz. of cheese. Arrange cauliflower in a gratin dish, spoon over the onion and tomato mixture, coat with sauce. Beat the egg whites stiffly and arrange on top of cauliflower, making four pockets for egg yolks. Drop a yolk into each pocket. Sprinkle over the remaining cheese and grill until crisp and golden brown.

Pears in Tarragon Cream Dressing

(as an entree or sweets)

4 ripe juicy pears
Paprika
Lettuce leaves

Dressing:
1 egg
2 tablespoons castor sugar
1/4 pint cream
3 tablespoons tarragon vinegar
Salt and pepper

Method: Prepare dressing -- break egg into bowl and beat. Add sugar and gradually add vinegar. Stand bowl in saucepan of simmering water, stir until mixture begins to thicken, then remove from heat -- stir until slightly cool, season and chill. Whip cream and fold into dressing. Peel pears, cut in halves, lay each half on lettuce leaves. Before serving, coat eash [sic] pear half with 2 tablespoons dressing -- garnish with paprika on top.

Ambrosia

1 packet of marshmallows cut into 4 and soaked in 3 tbsp of sweet sherry for 20 minutes
1 cup coconut
300g sour cream
1 small can drained crushed pineapple
1 small can drained mandarin quarters

Method: Mix together, put into a serving dish and allow to stand until the next day.

UPDATE 26/10/2013: I made this. It tasted sort of tutti-frutti-like but my mother's description of "like Amoxicillin" could also fit.
