Sesame Greens

Equal quantities of:
green beans, cut into 5cm. lengths
zucchini chunks
celery chunks
lemon juice
2 tbspns. sesame seeds, toasted

Method: Blanch beans for 4 mins. in boiling water, zucchini for 2 mins. Run under cold water & drain. Add celery & squeeze over lemon juice. Toss lightly with sesame seeds. Chill & serve in individual lettuce cups.

Country Rice Salad

3 cups cooked brown rice (1 cup uncooked)
125g. mushrooms, sliced
1 red or green pepper, chopped
3 shallots, chopped
2 sticks celery, chopped
2 tomatoes, diced
1/2 cup chopped walnuts
salt and pepper to taste
1 cup diced cheese
1/4 cup chopped parsley

Dressing: 1 cup French dressing, 1 clove garlic, crushed, 1/2 cup Fountain Stir Fry Sweet & Sour sauce, 1 tbspn. finely chopped peanuts or crunchy peanut butter, 2 tspns. sesame seeds.

Method: Combine rice, mushrooms, pepper, shallots, celery, tomatoes and nuts. Season to taste with salt & pepper. Blend all dressing ingredients thoroughly. Pour over rice and toss well. Allow 1 hour to stand before serving if possible. Garnish with a few extra mushrooms, chopped parsley and cheese.

Serves 4.

Crunch

[Children's Munchies for Parties]

Spread butter and vegemite on dry bread. Sprinkle with grated cheese, poppy or sesame seeds. Cut into fingers. Bake in moderate oven.

Camembert Hot Bread

Cut a French stick into 2 cm wide slices almost through to the base. Finely chop a 125g Australian camembert cheese and add 3 tbspns. butter, salt, pepper and chopped parsley. Beat well. Spread cheese mixture onto each side of bread. Sprinkle with sesame seeds. Wrap in foil and bake in a hot oven for 15 mins.

Date Fingers

250g chopped dates
2 tsp mango rind
1/2 cup sugar
1/2 cup sun-flower seeds
2 tbsp sesame seeds
1/4 cup mango juice
90g butter
2 eggs beaten
1&1/2 cups wholemeal s.r. flour

Method: Boil dates, mango juice and rind, butter and sugar together for a few minutes, when cool add eggs, flour and seeds. Spread in swiss roll tin and cook in moderate oven about 1/2 hour. Cut into fingers when cook. (You can sprinkle sesame seeds on top before baking.)

Savoury Fingers

Butter bread and spread with one of the following. Cut into fingers and bake in a moderate oven for 10-15 minutes. Serve hot or cold. Store in an airtight container for further use.

* vegemite or promite and grated cheese
* parmesan cheese and garlic salt
* sesame or poppy seeds
* tomato paste/pesto topped with bacon bits and grated cheese

Surprise Meat Balls

250g minced topside
250g sausage mince
1 pkt. chicken noodle soup
1 finely chopped onion

Method: Combine the topside, sausage mince, 1 packet chicken noodle soup, and the onion. Mould meat ball mixture around a button mushroom. Dust with flour, dip in beaten egg and roll in a mixture of 1&1/2 cups breadcrumbs and 1/4 cup sesame seeds. Fry in a little oil until golden. It makes about 12.

Creamy Sesame and Date Balls

225gm cottage cheese
50gm chopped dates
25gm sesame seeds roasted
100gm sesame seeds, roasted and ground
lemon juice.

Method: Mix all to-gether except for raosted [sic] seeds. Form into small balls and coat with sesame seeds. Leave in the refrigerator overnight to harden and develop flavour. Try substituting dates for other dried fruit, for example dried pear.

Cheese Log

8 oz Philly cream cheese
1/2 jar Kraft cream cheese
8-12 oz grated matured cheese
chives chopped
garlic crushed
almonds
sesame seeds
caraway seeds
tabasco sauce
freshly ground black pepper

Method: Cream philly cheese, add kraft cream cheese, mix in flavourings, then grated mature cheese, form into 4 portions, roll in chopped almonds and seeds mixed together. Chill until firm.

Cheese Ball

500 gm grated tasty cheese
250 gm soft cream cheese

Various flavours can be added:
1. Walnut cream cheese cubes, gherkin and grated onion.
2. Crushed pineapple.
3. Devilled ham spread or chicken and corn spread.
4. Smoked salmon spread.

Method: Combine all ingredients. Shape into ball. Roll in sesame seed, poppy seed or paprika powder.
