2 packets lime jelly
2 tablespoons vinegar
1 tablespoon grated onion
1 cup whipped cream
3 chopped hard boiled eggs
2 cups hot water
1 teaspoon salt
1/2 cup salad dressing
3 cups diced celery or mixed vegs.
1 small can tuna
1/4 cup chopped cheese
Method: Dissolve 2 packets jelly in 2 cups hot water. Add vinegar and grated onion and salt. Set aside to cool until slightly thickened. Fold in salad dressing and whipped cream. Add remaining ingredients. Pour into suitable mould till set, turn out onto platter and decorate as desired.

Hawaiian Rice Salad
Toss together: 2 cups cooked rice, 1/2 cup Tongala mayonnaise or french dressing, 1 cup grated cheese, 1/2 cup grated carrot, 1/4 cup pineapple pieces.

Tuna Lemon Loaf
15 oz. can chunk style tuna
16 oz., can cream of asparagus soup
1 cup dry biscuit crumbs
1 small onion finely chopped
1 dessertspoon chopped parsley
3 eggs
1 tablespoon chopped canned pimento
1 tablespoon lemon juice
pinch pepper
Method: Combined the drained tuna with the soup, biscuit crumbs, onion, pimento and parsley. Separate whites and yolks of eggs. Lightly beat the yolks of the eggs and add the tuna mixture with lemon juice and pepper. Beat egg whites until stiff and frothy and gently fold through the mixture. Spoon mixture into well greased loaf tin and bake in moderate oven for 1 hour. Cool slightly before turning out of tin onto serving platter. Chill.
Optional: Surround with curly endive and garnish with cucumber twists. Serve with tossed side salad and separate bowl of lemon wedges and salad dressing sprinkled with a little paprika.

Boiled Salad Dressing
1 cup vinegar
2/3 cup milk
2 heaped tspns plain flour
1 sml tspn mustard
1 cup sugar
2 eggs
1 sml tspn salt
Method: Mix flour, sugar, mustard, salt with 1/2 cup of water, then add beaten eggs, milk & vinegar. Simmer until thick, stir often. This is an excellent keeper.

Savoury Trays
Serve on either rectangular trays with food in vertical lines or round trays with food in wheel-spoke fashion:
Eggs in mayonnaise: Beetroot (dried on kitchen paper) diced and covered with french dressing: Asparagus spears: Red and Green peppers, sliced thinly: Tomatoes (halved and scalloped): Peas in mint: Carrots (baby), dipped in orange juice: Dried Apricots with cream cheese in centre: Variety of cold meats (bite size pieces).

Apple and Turnip Salad
2 turnips cooked and chopped
2 red apples cubed
1 stick celery thinly sliced
1/2 cup walnuts
French dressing
Method: Mix the warm turnips with the dressing and allow to cool. Stir in the remaining ingredients.

Rice Coleslaw
3 cups cooked Rice
1 cup grated Carrot
1/2 cup chopped Capsicum
2 cups shredded Cabbage
1 cup Pineapple pieces
1/2 cup chopped Shallots
Dressing:
1/3 cup French Dressing
1/3 cup Mayonnaise or sour Cream
Pinch Ginger
1/2 tspn Sugar
Salt and Pepper
Method: Add dressing to above vegetables and rice, blend well and season to taste. Garnish with extra pineapple pieces and toasted almonds.

Fresh Pear Cocktail
3 sticks celery, chopped finely
12/ cup spring onions, chopped finely
1 red apple, diced
2 firm pears, diced
1/2 cup raisins
4 oz spring onion cheese, sliced and cut into small squares
Combine in a bowl carefully.
1/4 cup French dressing
1 tsp finely chopped fresh mint (optional)
salt & freshly ground black pepper
Method: Arrange in serving dishes and pour over dressing.[Serves 6]

Luncheon Salad
3 cups sliced beetroot
2 cups cooked string beans
1 cup French dressing
3 tablespoons mayonnaise
1 cup crushed pineapple
1 lettuce
2.1/4 cups cottage cheese
Method: Marinate beetroot and beans separately in dressing in refrigerator for 2 hours. Wash and drain lettuce and arrange leaves in the centre of a serving dish. Mix cheese, pineapple and mayonnaise until well blended. Pile this mixture on top of lettuce leaves, then arrange marinated beetroot and beans around lettuce leaves. Chill to serve. Serves 5-6.

Egg and Bacon Salad
1 crisp lettuce
3 bacon rashers
1/4 cup chopped shallots
1/2 cup chopped celery
3 hard-boiled eggs sieved
1 teaspoon garlic granules
1/4 cup French dressing
Method: Grill bacon well so that it will crumble finely. Wash lettuce and tear into pieces and place in bowl. Add bacon crumbles, shallots, celery, sieved eggs and garlic granules. Pour over dressing. Toss well and serve immediately.

Rice Salad Francaise
1 cup long grain rice
1/2 cucumber, peeled and diced
60g fresh mushrooms, sliced
2 radishes, sliced
1 small green pepper, cut into strips
125g Processed cheddar cheese, cubed
Salt and pepper
French dressing
Lettuce leaves
Chopped parsley
Method: Cook rice in boiling salted water until just tender. Drain well. Chill. Add cucumber, mushrooms, radishes, green pepper and cubed cheese. Season with salt and pepper. Pour over sufficient dressing to coat. Mix well. Place in a lettuce-lined bowl. Before serving sprinkle with chopped parsley. Serves 4-6.

Rockmelon and Grape Salad
2 cups rockmelon balls
1&1/2 cups sultana grapes
1 pkt. (30 oz.) cream cheese
1/4 cup salad dressing or mayonnaise
Lettuce
Method: Combined melon balls and grapes. Chill. Mash cream cheese, blend in mayonnaise or salad dressing. Combined with fruit. Serve on lettuce leaves.

1 & 1/2 cups cooked rice

1 grated carrot
240g button mushrooms
120g seedless green grapes
1 cup plain yoghurt
1/2 cup sour cream
1 teaspoon worcestershire sauce
chopped parsley
salt & black pepper
Method: Combine rice, french dressing & carrot. Make a layer of these ingredients in a shallow casserole or serving dish. Combine remaining ingredients, place on top of first layer. Chill & serve.

Orange Appetiser
Method: Remove the pulp from required number of halved oranges & cut into small pieces. Mix with some finely chopped halved walnuts, several minced & stoned olives, & a small proportion of chopped tart apple. Mix 2 tab. sherry with 1 tab. honey, pour over the mixed fruits, stir lightly. Pile into empty orange skins. As an alternative to the sherry & honey dressing, toss the fruits in a good creamy salad dressing mixed with its own quantity of strained orange juice.
