4 rounds of bread toasted on one side, spread with butter and cheese, a few dots of vegemite. Finely cut pieces of bacon added on top. Put on slide and put under griller until the cheese becomes nice and brown.

Sandwich Fillings
Cottage cheese, drained crushed pineapple, onion, salt.
Chopped raisins, mashed banana, a little sugar, orange juice.
Dates, chopped orange, nuts and raisins.
Peanut butter, cheddar cheese and chopped raisins.
Grated carrot and chopped raisins over peanut butter.
Cheese or ham with pineapple slices.
Ham or asparagus, or egg (curried).
Tomato and egg.
Chicken, walnuts and tomato.
Vegemite and walnuts.
Salmon and cucumber.
Cucumber (finely chopped), grated onion and mayonnaise.
Cottage cheese, celery, walnuts (grated carrot adds colour).

Mince Steak Casserole
1 lb. fine minced steak
1 medium onion
2 dessertspoons plain flour
1/2 teaspoon salt
Pepper
1 cup finely diced carrot
1 small tin whole sweet corn
1 tablespoon tomato sauce
1/2 teaspoon vegemite (optional)
1 teaspoon Worcestershire Sauce
One-third pint water
Method: Cook onion in a little fat until tender but not brown. Stir in the meat, flour, salt, pepper, and brown slightly. Add other ingredients and heat till boiling. Put in covered casserole and cook for 35 to 45 minutes.

Brown Bread Soup
(A good way to use up stale brown bread which has been dried & stored in a paper bag). Take 2 medium slices of any brown bread, put in saucepan, cover well with water, & let boil gently (with lid half on, lest it boil over) about 10-15 mins. Force through a colander, and add enough water for right thickness. Add 1 tspn vegemite or bonox, 1 soup cube, 1 tspn butter, & 1 tspn tomato sauce. Re-heat & bring to a boil. Keep stirring until all ingredients are dissolved and the soup is ready for serving.

Crunch
[Children's Munchies for Parties]
Spread butter and vegemite on dry bread. Sprinkle with grated cheese, poppy or sesame seeds. Cut into fingers. Bake in moderate oven.

Aussie Potato Bake
Equipment Needed
Sharp knife
Beater
Grater
Measuring Cup
Casserole dish
Can opener
Saucepan
Preparation Time: 15 minutes
Cooking Time: 15-20 minutes
Ingredients
Salt and Pepper
2 large Potatoes
3/4 cup grated Pumpkin
1 Onion (chopped)
2 Bacon rashers (chopped)
3/4 cup grated Carrot
1/2 cup grated Cheese
1 Egg (beaten)
1 teaspoon Vegemite
Crushed Cornflakes
Extra Cheese
Method
Peel and boil potato and mash with vegemite and salt and pepper. Mix in rest of ingredients. Place in a casserole dish and top with crushed cornflakes and cheese. Bake at 180C for 15-20 minutes.

Savoury Fingers
Butter bread and spread with one of the following. Cut into fingers and bake in a moderate oven for 10-15 minutes. Serve hot or cold. Store in an airtight container for further use.
* vegemite or promite and grated cheese
* parmesan cheese and garlic salt
* sesame or poppy seeds
* tomato paste/pesto topped with bacon bits and grated cheese

Savoury Slices
1 sheet short crust pastry (10" square) brush with beaten egg and cover with following mixture: -
1 tbspn worcestershire sauce
1 tbspn tomato sauce
100g grated Kraft cheese
2 bacon cubes crushed or bacon bits
Roll up firmly but not too tightly. Brush lightly with egg and cut into thin slices (makes approx 30) and bake in a hot oven 450F for 10-15mins until a nice brown. Serve hot or cold.
Alternative filling: brush pastry with worcestershire sauce and cover thinly with sausage meat (approx 200g) pat evenly with damp hands. These may be cooked in toaster oven. Other savoury rolls can be made with a bread base instead of pastry. Cut a sandwich loaf of bread lengthwise in thin strips, butter and cover with mixture as above. Roll and cut in slices and bake until a nice brown.
Another nice filling: spread bread with butter then vegemite and sliced cheddar cheese, roll and slice and back.

Crisp Crust Mince Pie
500 g cooked mutton, 2 large onions, 1/2 packet Kraft cheese, pepper and salt, 1/3 cup vinegar, 2 teaspoons sugar, 2 teaspoons Holbrook's sauce, hot water, 2&1/2 cups cornflakes, 1 egg, 2 tablespoons butter.
For Gravy: 1/2 cup milk, 1/4 cup tomato sauce, 1 teaspoon vegemite, 1&1/2 cups water, flour or cornflour, 1/2 teaspoon salt, and pinch of sugar.
Method: Mince together the mutton, onion and cheese. Take the vinegar, sugar and sauce with sufficient hot water to fill a cup. Pour this over the mince and mix well. Place all in a pie dish, cover with the following crust. Crush the cornflakes, add to them the beaten egg and melted butter. Mix well and place on top of mince. Bake in a fairly hot oven until nicely browned. For the gravy, mix milk, tomato sauce, vegemite and water. Bring to boil and thicken with flour or cornflour. Add salt and sugar.

Wine Steaks
2lb undercut steak cut in serve sizes (or T bone)
1 good tsp Vegemite
1 med sliced onion
1 cup burgundy/claret
1 cup tomato juice
pepper
Method: Fry steak in butter till brown, add onion, brown; add other ingredients and bring to simmer. Let stand until ready to reheat and serve.
Serve with creamy mashed potatoes with chives. [Serves 4]

Simple Tasty Oven Meals - Number Two
1&1/2 - 2 lbs topside steak
1 large onion
butter and vegemite
seasoning
Method: Cut steak into serving pieces and spread with butter and vegemite. Place the chopped onion in a casserole dish. Place the steak on top of the onion, season to taste. Bake at 325 to 350 degs for 1&1/2 to 2 hours.

Pintadeau Sauce (for Roast Poultry or Pork)
Method: Place in saucepan:
2 tablespoons malt vinegar
2 tablespoons brown or raw sugar
2 crumbled chicken cubes
1 cup water
black pepper
peeled zest of 4 oranges and 3 lemons (use potato peeler)
1/2 cup orange juice
1/4 cup cherry brandy.
Simmer for 15 minutes and let stand for another 10 to 15 minutes. Strain and add:
grated zest of 2 small oranges and 1 lemon
1 level teaspoon Vegemite
Thicken with a little cornflour mixed with water. Add:
2 heaped tablespoons seeded raisins
1 jar drained pitted sour cherries
1 tin drained whole apricots
1 tin preserved figs
1 tablespoon brandy
thin slices of 2 large oranges blanched in boiling water and peeled
Set aside until serving time, then add 2 or 3 tablespoons of toasted almonds and enough brandy to adjust to own taste. Serve with little new potatoes and green French salad. This sauce can be prepared a day or two beforehand if wished.
