Banana Dip with Fruit Crudites

3 medium bananas
350g LF-cottage cheese [low-fat]
150g NF-yoghurt, plain [non-fat]
1 lemon, quartered
2 Tblsp mango chutney
1 tsp mild curry powder
2 Tblsp sultanas

Method: Blend all the ingredients except the sultanas, then stir them in. Garnish the dip with lemon wedges and surround it, on a decorative plate, with crudites:
3 apples, cored and thinly sliced
2 firm pears, peeled, cored and thinly sliced
3 Tblsp lemon juice 
4 stalks celery, cut into fingers
2 carrots, cut into matchsticks
Toss the apples and pears in lemon juice.

Christmas Cheesecake

Base:
1 cup biscuit crumbs
60g melted butter

Combine ingredients & press into a 22cm pie dish with the back of a large spoon. Chill.

Filling:
250g cream cheese
200ml natural yoghurt
1 pkt lemon jelly
1 cup boiling water

Beat cream cheese & natural yoghurt together. Dissolve lemon jelly in boiling water, cool then stir into yoghurt/cheese mixture. Refrigerate until starting to thicken, spoon onto biscuit layer and chill until set. For decoration, make one red or green jelly in one cup of boiling water, pour into a shallow tray. Allow to set then cut into Christmas shapes with a sharp knife or biscuit cutter. Place shapes on top of cheesecake. Any remaining jelly can be used as additional decorations if desired.

Quick Mix Onion Bread

3 cups (450g) S R Flour
65 gm pkt Cream of onion soup
2 cups buttermilk, or plain yoghurt (approx)
2 tspns milk

Method: Grease a 10cm x 25 cm loaf pan. Sift flour, mix in dry soup mix, then add enough buttermilk to give a soft sticky dough. Turn onto a lightly floured surface, knead until smooth, shape into a loaf. Place in pan, brush top with milk. Bake in mod oven for approx 1 hour.

Salmon Pate

1/2 cup hot water
1 tbspn gelatine
1 chicken stock cube
22g tin red salmon
4 shallots
1/4 cup mayonnaise
2 tspn lemon juice
salt
pepper
1/2 cup cream or yoghurt
lettuce leaves

Method: Vitamize water, gelatine and chicken stock cube. Add undrained salmon, shallots, mayonnaise and lemon juice, salt and pepper and blend until smooth. Add cream or yoghurt and blend again. Pour into mould or individual moulds. Refrigerate until set. Serve with lettuce leaves with toast triangles or with cracker biscuits.

Apricot Whip

4 oz dried apricots
2 tbsp honey
2 egg whites
1&1/2 cups hot water
1&1/4 cups yoghurt

Method: Soak apricots in hot water for 10 mins. Add honey, then simmer for 20 mins. Cool and blend in blender. Whisk egg whites, fold gently into mix. Refrigerate till needed.

Oodles of Noodles with Ham & Cheese

1/2 of a 250g packet of egg noodles (or egg free)
200g (4 slices) lean ham
1.1/2 (150g) cups grated cheese
1.1/2 cups milk
3 eggs, beaten
1/4 cup plain yoghurt (optional)
4 chives or a small onion, chopped
Margarine or oil for greasing
1/2 pack spinach (frozen, thawed and liquid squeezed out)

Method: Cook noodles in lots of boiling water until just tender, drain. Combine cooked noodles with all other ingredients. Pour into lightly greased baking dish and place into a moderate oven (180C) for 30 minutes or until set. Serves a family of 4-6. Suitable for freezing.

Tangy Pork and Orange

2 tablespoons butter
2 teaspoons curry powder
1&1/2 cups orange juice
1 tablespoon cornflour
1/4 cup almond halves
500g lean pork cut in strips
1/2 cup chopped spring onions
1 cup thinly sliced celery
1 tablespoon water
1/2 cup natural yoghurt

Method: Melt butter in a heavy based frypan. Add curry powder and cook for 1 minute. Add pork and onions and cook over high heat until outside of meat is browned. Add orange juice and bring to the boil. Cover and simmer for 25 minutes, add celery. Blend cornflour with water until smooth, add to pan stirring constantly. Return to the boil and cook 5 minutes. Spoon into a serving dish, sprinkle with almonds. Stir yoghurt until smooth and spoon over pork. Garnish with a few fine strips of orange rind if desired. Serve with rice or noodles.

Orange Honey Fluff

1 tbsp honey
2 tsp lemon juice
2 egg whites
rind and juice 1 orange
300g natural low-fat yoghurt
extra orange to decorate

Method: Blend honey with juices. Add rind and yoghurt. Whisk egg whites till stiff and fold into mixture. Spoon into dishes and refrigerate up to 1 hour (or it will separate). Serves 4. 1 serve = 75 cal. (314kj).

Baby Beet Layer Salad

1 x 825g can baby beets
1 x 440g tiny taters
2 cups celery, sliced diagonally
1 green capsicum, chopped
1/2 lettuce, shredded
2 tomatoes, sliced

Dressing:
1/4 cup oil
1 tbspn. lemon juice
1/2 tspn. dry mustard
1 tbspn. finely chopped onion
1 tbspn. chopped parsley

Topping:
1 cup natural yoghurt
1 tbspn. honey
1 green apple, grated
1/4 tspn cinnamon

Method: Place the layer of lettuce first, then capsicum, then celery, then tomato, then potato, then baby beets. Pour dressing on and spoon topping last.

Rice & Mushrooms

1 & 1/2 cups cooked rice
french dressing
1 grated carrot
240g button mushrooms
120g seedless green grapes
1 cup plain yoghurt
1/2 cup sour cream
1 teaspoon worcestershire sauce
chopped parsley
salt & black pepper

Method: Combine rice, french dressing & carrot. Make a layer of these ingredients in a shallow casserole or serving dish. Combine remaining ingredients, place on top of first layer. Chill & serve.

Chilled 'Fruity' Soup

Method: In a blender, process 440g can apricot nectar, 2 chopped green apples, one banana, a can of peeled tomatoes & a carton of sour cream or yoghurt. Decorate with cherry tomatoes & mint for a seasonal touch.

Plum Soup

4 kg small plums
1 cup white wine
Low fat yoghurt
3 cups low cal lemonade
1 teaspoon mace

Method: Stone plums and stew gently in large pan with lemonade and wine. When cooked add mace. Allow to cool, then puree. Add more lemonade if thinner consistency desired. Refrigerate. N.B. Leftover soup is delicious if set into firm jelly, chopped into pieces and served with vegetable salad.
