Jewel Island

Encourage young people to eat what's good for them, serve fruit salad in a scooped out orange with bright chopped jelly garnish.

No Cook Fruit Cake

8 oz (250g) coffee or arrowroot biscuits
1 T sherry
2 T cocoa
1 egg
1 T full cream dry powdered milk
4 T butter or margarine
1 cup icing sugar
1 cup mixed fruit
pinch salt

Method: Crush biscuits finely, add fruit, sherry, salt, powdered milk & cocoa. Beat egg & sugar together & add to dry ingredients. Melt butter & blend well through the mixture. Press into buttered tin. Allow to set & ice with white icing & sprinkle with coconut.

Tea Cups

(This Recipe is from Samantha, Kahlan & Luke's Family)

Lifesavers: musk and peppermint
Marshmallows
Iced round biscuits: Tic Toc's
Icing mixture, bought ready-made

Method: Cut the lifesavers in half. Place the biscuit iced side up, attach a marshmallow using the icing into the middle of the biscuit. Attach one half of the lifesaver to the side of the marshmallow also using the icing.

Hint: The biscuit becomes the saucer, the marshmallow becomes the cup, and the lifesaver becomes the handle of the teacup. Great for playtimes and parties.

Super Kids Tarts

wholemeal bread slices
1 egg white
2 Tblsp TONE skim milk

Method: Cut circles from bread to fit into metal patty tins. Beat egg white and milk in a bowl. Brush both sides of bread circles with the milk mixture and press into lightly oiled patty tins. Bake at 190°C until crisp and golden. Use any of the following fillings or make some of your own choice:

Tuna: fill tarts with tuna (preheated), and top with sprinkle of grated LF [low-fat]-cheese. Place under griller to melt cheese.
Baked Beans: fill tarts with hot baked beans.
Ham and Corn: dice a little lean ham and stir into canned creamed corn. Heat this mixture then fill tarts.
Banana: heat mashed banana, sultanas and 1 Tblsp of fruit juice in a saucepan and serve in hot tarts.

Tuna Dip (For Emergencies)

Great for grandchildren

Serves 4

185 g tin good quality tuna in olive oil
Olive oil, good quality
Chives or finely chopped cherry tomato to garnish (optional)

Method: Drain oil from tuna and place tuna in food processor. Blitz briefly. With motor running, drizzle in olive oil until mixture forms a soft spreadable paste. Put mixture in serving bowl and garnish. Serve with toast fingers or crackers.

Tip: Can also add chopped capers, lemon juice or Philadelphia light cream cheese, but it really doesn't need it.

Pikelets the Children Can Make

1 cup SR flour
1/2 teaspoon bicarbonate soda
1/4 cup sugar
Pinch salt
1/2 cup milk
1 egg

Method: Place all dry ingredients in a bowl. Beat egg and milk together, add to dry ingredients. Stir into mixture and then beat well with wooden spoon. Place small amounts in buttered frypan, moderate heat. Cook both sides. Serve with butter, or cold with cream and jam. Our family loves them.

Cheese & Bacon Savoury

(Renamed "Rat Bait" by my teenage children - Phyllis Rohrsheim-Boucher)

Spread thickly with butter or margarine 6 slices of thinly sliced white bread. Cut to size required and place on oven tray and spread each piece with the cheese and bacon mixture:

The mixture -
1 cup grated tasty cheese
2 rashers bacon, finely chopped
1 tspn dry mustard
pinch cayenne pepper
Mix with one or two eggs to make a spreading paste.

Bake in moderate oven until golden brown. Delicious hot or cold.

Purple Poison Punch

[Cooking Children Can Do With Supervision]

4 cups cold milk
2 cups chilled ginger ale
1 cup cold unsweetened grape juice
1 & 1/2 cups vanilla ice cream

Method: Combine all ingredients in punch bowl. Stir with ladle. Use spoon to cut icecream into small pieces. Serve punch with ladle, add a piece of icecream to each cup.

Creative Liver Pate

1 kg chicken livers
250 g butter
3 tabspns brandy
1 onion, chopped
1 red capsicum, chopped
3 rounds ham, chopped
1 tspn salt
1 chicken cube
1 sprig fresh thyme
1 tspn French or Dijon mustard
1/2 tspn fresh nutmeg
fresh ground black pepper

Method: Wash livers. Melt half the butter, add livers and toss. Add onion, capsicum and ham, and toss. Simmer gently 5 minutes. In a separate pan warm the brandy. Turn off the exhaust fan, pour brandy over livers, ignite and shake. Put lid on pan, simmer gently about 10-15 minutes. Remove pan from heat and cool a little. Tip contents into food processor, and add all remaining ingredients - blend till smooth.

Creatively add either walnut pieces, or blanched almonds, or sliced mushrooms or slice stuffed olives or ……

Garnish to serve accordingly.

Note This pate freezes really well, and children love it.

Crisp Frankfurt Tartlets

Childrens Munchies for Parties

10 cocktails frankfurts, sliced
24 slices white bread
125g butter melted
2 bacon rashers
1 cup grated cheese
2 tbspns. tomato sauce

Method: Flatten bread with rolling pin. Cut into rounds using a 7cm cutter. Brush each side of bread with melted butter. Press into round based patty tins. Bake in moderate oven for about 8 mins. or until crisp and lightly browned. Chop bacon and saute with sliced frankfurts. Drain. Add sauce to frankfurts and bacon. Mix well. Spoon into bread cases and top with cheese. Bake in moderate oven for 15-20 mins. until cheese is melted and lightly browned.

Childrens Punch

1 pkt. raspberry jelly crystals
1 pint boiling water
1 can concentrated orange juice
2 x 450g cans pineapple
juice of small lemon
2 small bottles ginger ale
1 small bottle soda water
1 cup fresh cherries (optional)

Method: Make up jelly, add juices. Chill. Before serving, add chilled soft drinks and icecubes. Float cherries on top (optional).

Hard Boiled Mice

Eggs (as many as you wish)
1 raw carrot
whole cloves
celery stalks
lettuce leaves

Method: Hard boil the eggs, then let them cool. Peel the eggs. Slice eggs in half lengthwise. Lay them down on wax paper. Wash and peel carrot. To make ears, cut 2 carrot slices, each about the size of a 2 cent piece. Cut a pointed base in each slice then stick points into egg just above narrow end. Stick 2 cloves into each mouse for eyes. For whiskers cut 4 short lengths of celery, and tail a long length of celery. Add them to the mouse. You can use shoestring licorice instead of celery.

Party Mice

[Childrens Munchies for Parties]

1 pkt. jelly crystals
1 tin of pear halves
some snake lollies
currants and sultanas

Method: Make jelly and pour into a wide shallow container. Leave to set. Place pears on jelly, 1 pear per child. Cut "heads" of snake lollies. Use the body for tails and the heads for ears, currants for eyes and sultanas for nose. Head to be positioned at narrow end of pear.

Cheese Pictures

24 slices of bread
24 slices cold luncheon meat
butter
12 slices cheese

Method: Butter the bread and place a slice of luncheon meat on each slice. Using fancy biscuit cutter, cut the centre out of the slices of cheese. Top half the slices of luncheon meat with the fancy shapes, using the outside of the cheese squares as frames for the remaining slices.
