Pastry:
Rub 2 tablespoons butter or margarin[e] into 1 cup of S.R. Flour, sieved with pinch of salt. Add a little milk to make a firm dough. Roll out and line cake tin, one deeper than a swiss roll tin. Spread with plum and raspberry jam and sprinkle with currants.
Cake:
Beat 2 tablespoons butter with small cup sugar, add 2 eggs, and beat well. Add a little milk and 1 cup S.R. Flour sifted with a pinch of salt. Spread cake mixture over currants and bake in a moderate oven.
When cool, ice with lemon icing and cut into oblong pieces.

Australia Cake
6 ozs. butter, 6 ozs. sugar, 3 eggs, 12 ozs. S.R. flour, about 6 tablespoons milk, few drops vanilla, raspberry jam, cochineal to colour.
Cream butter and sugar till light, add beaten eggs gradually, and beat well. Add sifted flour alternately with sufficient milk to provide a soft, dropping consistency. Put one half of mixture into well-greased cake tin. Spread with raspberry jam. Colour remaining half of mixture pink with cochineal, and spread evenly over jam. Bake in moderate oven 1&1/4 to 1&1/2 hours. Turn carefully on to cake cooler. When cold, ice top - one half pink, the other white. Or use white icing and sprinkle white coconut on the one half, pink on the other (rubbed in drop of cochineal and dried first).

Scramble Pudding
1/2 lb. Flour
1/2 lb. Bread crumbs
1/2 lb. Suet
1/2 lb. Raspberry Jam
Mix all well together with a little milk; boil 2 hours.

Tomato Jam - Raspberry Jam
6 lb ripe tomatoes
5 lb sugar
1 tin raspberry jam
1 bottle raspberry cordial - Bobo
Method: Chop tomatoes and boil 1/2 hour. Add sugar and boil 3/4 hour. Stand 5 mins. Add jam and cordial and stir well. Bottle while still hot.

Matrimonials
1&1/2 cups S.R. Flour
185 gr. (6 ozs.) Butter or Margarine
1/2 cup Rolled Oats
1 cup Coconut
1 cup Brown Sugar
Raspberry jam, warmed slightly
Method:
Sift flour, cut butter into small pieces and rub into flour until mixture resembles breadcrumbs. Add rolled oats, coconut and sugar, and stir until thoroughly mixed in.
Divide into halves, put one half into greased 28 x 18 cm (11" x 7") lamington tin, firmly pressing flat. Pour warmed jam over, covering surface, spreading evenly.
Sprinkle rest of mixture over jam, covering it, and bake in moderately hot oven about 30 minutes. Let cool slightly in tin, then cut into slices and loosen edges. Leave until cold before removing from tin.

Mock Raspberry Jam
Mock Raspberry Jam (1)
6 lb sugar, 6 lb tomatoes, 1 small tin raspberry jam, 1 bottle raspberry cordial extract.
Skin tomatoes and cook till tender, add sugar, boil till sets. Add raspberry jam and cordial, boil further 10 minutes.
Mock Raspberry Jam (2)
12 lb melon, 8 lb sugar, 1 bottle raspberry cordial extract, 1 tin raspberry jam.
Mince melon finely. Sprinkle over 4 lbs sugar, leave stand overnight. Next day boil till clear, add remaining sugar, extract and raspberry jam and boil till it sets on saucer.
