1 cup cooked green lentils
1 cup cooked mashed potato
1 cup cooked rice
1 cup fresh wholemeal breadcrumbs
1 small onion
4-6 Tblspn gluten flour
2 tsp mixed herbs
Method: Mix together. Shape 1 large tablespoonful into a roll, or patty. Roll in bran and fry in lightly oiled pan, or bake in oven.
Vausage Rolls
Process as above, but do not fry. Wrap roll in a rectangle of thin Basic Pastry. Cook in hot oven until pastry cooked. Serve hot or cold. Size can be varied to suit.
Basic Pastry (Basic Pie Crust, p.51)
2 cups SR flour (white or wholemeal)
3 Tblsn PU [polyunsaturated]-vegetable oil
TONE skim milk
Method: Rub the oil into the flour. Add milk to give the desired consistency. The dough should come cleanly from the bowl and form a soft ball. Roll out on flour or bran to a thin layer. Bake in hot oven 20-25 minutes. An advantage of making the Basic Pie Crust is that it can be rolled out and used for either sweet or savoury pies as required.
Savoury crust: add pepper, herbs, curry, etc.

Curried Egg Mornay
2 oz. [60 gm.] butter or substitute
2 tablespoons flour
3 teaspoons curry powder
2 cups milk
1/2 cup mayonnaise
12 oz. [375 gm.] can asparagus cuts
3 hard boiled eggs
salt and pepper
1&1/2 cups wholemeal breadcrumbs
1/2 cup bran breakfast cereal
2 oz. [60 gm.] butter/substitute, extra
Method: Melt butter, add flour and curry powder, stir until smooth, cook 1 minute. Remove from heat, add milk gradually, stirring until smooth. Return to heat, stir until sauce boils and thickens, reduce heat, simmer 2 minutes. Add mayonnaise, drained asparagus and chopped eggs, combine lightly, season with salt and pepper. Spoon mixture into ovenproof dish or 4 individual ovenproof dishes. Combine breadcrumbs, crushed bran and extra melted butter, sprinkle over the top of asparagus mixture. Bake in moderate oven 20-30 minutes for large dish or 15-20 minutes for small dishes until topping is golden brown. (Serves 4)

Bean Tuna Bake
2 cups white sauce made with skim milk / 1 teas. french mustard / 125g tasty cheddar cheese grated / 1x 740gm can three bean mix drained / 1x 440gm can tuna in brine (drained & flaked) / 1 teas. fresh lemon juice / 1 cup soft breadcrumbs (wholemeal).
Method: Blend french mustard and cheese with prepared white sauce. Stir till smooth and remove from heat. Place half of the three bean mix in greased casserole dish, and spread tuna over top. Sprinkle with lemon juice and pour over half sauce. Add remaining beans and spread remaining sauce over. Sprinkle breadcrumbs evenly over top. Bake in pre-heated oven 180C for 30 minutes, until heated through and golden brown.
Serve with side dishes of vegies. Serves 6.

Cheesy Broccoli Mornay
100g (2 slices) lean ham, chopped
1 onion, chopped
500g broccoli, cooked then chopped
250g small shell noodles
1 tablespoon poly or monounsaturated margarine
2 tablespoons plain flour
1 cup milk
1.1/2 cups (150g) grated cheese
1/4 cup fresh wholemeal breadcrumbs
Margarine or oil for greasing
Method: Place pasta on to cook. Melt margarine in a large boiler. Cook onion until soft. Add the flour and cook for 1 minute. Remove from heat, add milk gradually stirring all the time. Return to heat, continue stirring until sauce boils and thickens. Remove from heat, add 3/4 of cheese. Stir well to make a smooth sauce. Combine sauce with ham, broccoli and noodles. Pour into greased baking dishes. Sprinkle with remaining cheese combined with breadcrumbs. Reheat in moderate oven (180C). Serves a family of 4-6. Suitable for freezing.
Hint: It is easy to chop broccoli in the cooking saucepan once it has been cooked and drained. Use a long bladed knife. 2 slices of bread will make 1 cup of bread crumbs.
