Cheese Ball

1 cup smoked almonds
1/3 cup Kraft mayonnaise (not home made)
2 shallots, finely chopped
250 gm cream cheese
1/2 cup bacon pieces, gently fried
1 Tbspn parsley, chopped

Method: Mix all together. Mould in to a cone shape and set in fridge. After 1 - 3 hours add smoked almonds to represent a pine cone.

Delicious Salad

1/2 head of celery chopped small
1/2 large onion chopped
1 medium carrot grated
1 apple chopped
small tin crushed pineapple
shallots chopped for added colour

Method: Mix together with mayonnaise and grated cheese.

Chicken Flavoured Potato Salad

500g potatoes
1&1/2 cups water
1 pkt chicken noodle soup
2 Tbspn chopped parsley
2 Tbspn chopped onion or shallots

Method: Peel potatoes and cut into cubes, place in saucepan of boiling water. Add contents of soup pkt and simmer gently for 5-8 mins or until potatoes are tender (add extra water if needed). Cool, add parsley and shallots. Refrigerate until chilled.

Country Rice Salad

3 cups cooked brown rice (1 cup uncooked)
125g. mushrooms, sliced
1 red or green pepper, chopped
3 shallots, chopped
2 sticks celery, chopped
2 tomatoes, diced
1/2 cup chopped walnuts
salt and pepper to taste
1 cup diced cheese
1/4 cup chopped parsley

Dressing: 1 cup French dressing, 1 clove garlic, crushed, 1/2 cup Fountain Stir Fry Sweet & Sour sauce, 1 tbspn. finely chopped peanuts or crunchy peanut butter, 2 tspns. sesame seeds.

Method: Combine rice, mushrooms, pepper, shallots, celery, tomatoes and nuts. Season to taste with salt & pepper. Blend all dressing ingredients thoroughly. Pour over rice and toss well. Allow 1 hour to stand before serving if possible. Garnish with a few extra mushrooms, chopped parsley and cheese.

Serves 4.

"Kiddley" Broth

Bread cut into squares, a few marigold heads, a few stalks of shallots chopped fine, lump of butter, salt and pepper. Put all in a basin, pour boiling water over and eat as soon as possible.

Vegetable Mornay

1 pt mornay sauce, 6 shallots, salt & pepper, 1 cup macaroni, 2 tspns curry powder, 2 oz cheese, 1 lb frozen mixed vegetables, 2 tspns curry powder (extra). 

Method: Cook macaroni in boiling salt-water until tender for about 10 mins. Drain. Place frozen vegetables in boiling salt-water; simmer for 5 mins. Drain well. Combine macaroni, vegetables, chopped shallots & curry powder with mornay sauce. Season with salt & pepper. Spoon into greased ovenproof dish, top with grated cheese, sprinkle over with extra curry powder, & bake in moderate oven 25-30 mins. Serves 4 to 6.

Potato & Ham Cake

This dish is ideal to make when ham on the bone is coming to an end.

1kg Potatoes
25g butter or margarine
1 small onion or shallot
250g cooked ham 
milk
pepper & salt to taste
dried bread crumbs

Method: Mince or cut ham very finely. Slice potatoes very thin. Saute the onion in the butter until golden in colour. In an oven-proof dish, layer potato & ham, adding pepper & salt to taste (beginning & ending with a potato layer).

Pour the milk over the layers, finishing by sprinkling the breadcrumbs on top. Drizzle the butter used for frying onions over breadcrumbs. Bake in medium hot oven until crust is golden brown & potatoes tender.

Asparagus Cheese Sandwich

30g butter
1 tspn. french mustard
4 slices bread
340g can asparagus spears, drained
3/4 cup grated tasty cheese
2 chopped shallots
paprika

Method: Combined butter and mustard in dish, cook on HIGH 30 seconds. Brush bread on both sides with mustard butter. Place two slices bread on flat dish, side by side. Place asparagus on top, cover with about 1/2 cup of cheese, top with remaining bread. Combine remaining cheese with shallots, sprinkle over bread, sprinkle lightly with paprika. Cook on HIGH 2 minutes or until cheese is melted.

Ham and Corn Slice

1/2 cup SR flour, sifted
1/2 cup instant milk powder
4 eggs
30g melted butter
1/2 cup water
1 cup grated cheese
6 chopped shallots
125 chopped ham
310g can drained corn kernels
1/2 tspn. mixed herbs
salt to taste
tabasco sauce (drop)
1/4 cup chopped parsley

Method: Sift flour and milk together into a bowl. Combine eggs, butter and water. Pour into flour mixture and beat until smooth. Fold in remaining ingredients. Spoon into a shallow greased ovenproof dish and bake in a 180C oven about 25 mins. Serve sliced with salad. Serves 6.

Melva Taylor's Tasty Morsels

SCONES - you can do all sorts of things with a basic recipe - 1 egg / 1 dess. sugar / 1 small cup milk / salt / 1 tabs. melted butter / 2 cups SR Flour.

SAVOURY - add 1 tabs. french onion soup in milk, add butter, stir, add to flour, mix with a knife. Knead on a floured board, cut out, place close to one another on a greased tray, glaze with milk.

TIME - 10 minutes hot oven (top shelf)
Can be cooked in small electric toaster oven.

OTHER SUGGESTIONS: grated cheese and cayenne pepper, chicken cube crumbled into the flour / curry powder / gherkin and herbs.

Leave out the sugar for savoury scones.

This mixture can serve as a pizza base when in a hurry.

SWEET - grated apple and honey can replace sugar. Grated orange and lemon rind, glaze with orange juice.

ROLL - flatten dough out - spread grated cheese and shallots - roll up - cut into slices and cook.

SALMON ROLL - drain can tuna/salmon, chop an onion and mix all with a little lemon juice, spread on dough, fold over like a pasty, slit across top 3 times, and cook with 1/4 can cream of chicken soup poured over as a sauce.

COOKED in a well kneaded lump (like damper) with grated cheese and bacon pieces on top or sprinkle of french onion soup etc. replaces bread with a meal. Very tasty.

Place tea towel in a colander and cover scones when cooked until needed. Stale scones can be revived by dipping in milk, popping in oven for a few minutes to warm through and freshen up.

Mutton Charlotte

Cold mutton slices, tomatoes, stale bread, salt, pepper, onion.

Method: Grate some stale bread, put the crumbs at the bottom of a greased pie-dish, then a layer of mutton, then some slices of tomatoes. As you proceed season with salt and pepper and a little minced onion. Let the top layer be of tomatoes. Sprinkle a few breadcrumbs over the top and bake for 3/4 hour. Tinned tomatoes may be used if fresh ones are not available.

Variations: Miss B. M. Limbert (Metropolitan) scalds her tomatoes and skins them, uses shallots instead of onion, and adds dobs of butter on top of top breadcrumbs.

Mrs. W. D. French (Postal) adds a crust made from thin slices of bread spread thickly with dripping or butter, and then moistened with gravy or stock or Oxo. A batter of 3 tablespoons S.R. flour, 1&1/4 cups milk and 1 egg is then poured over the whole.

Green Peppercorn Steaks

2 Fillet steaks
2 oz Margarine
1 tbspn Flour
1 Beef stock cube
2 tbspns Cream
1 tspn green Peppercorns
2 Shallots
1 cup Water
1 tspn French Mustard
Salt and Pepper

Method: Using a small, sharp knife, cut a small pocket along the centre edge of each steak, fill each with 1/2 tspn of green peppercorns - secure openings with 1 or 2 matchsticks. Heat butter in pan, add steaks and cook till brown and cooked on both sides. Remove steak from pan, keep warm while preparing sauce. Add chopped shallots to pan drippings, cook for 1 or 2 minutes. Gradually add water, add crumbled stock cube, stir till sauce boils and thickens slightly. Add cream, mustard, salt and pepper. Spoon sauce over steaks. Serves 2.

Crab Triangles

250 gms Filo Pastry
125 gms butter

CRAB FILLING
6 green Shallots
1 tlbspn Madeira or Dry Sherry
2 Hard Boiled Eggs (optional)
1 tlbspn Chopped Olives
45 gms Butter
250 gms Crab Meat
1 Egg Yolk
Salt & Pepper

BECHANNEL [sic] SAUCE
1/3 Cup Milk
Sliced Onion
Few cracked Peppercorns
Some Mace (optional)
1/2 Bay Leaf
45 gms Butter
3 tlbspn Plain Flour
Green Herbs (optional)

Method: Finely chop shallots & saute in butter until softened. Flake crab & remove any bony tissue. Add to shallots with remaining filling ingredients and blend into bacchanal [sic] sauce. Lay filo pastry flat on a damp tea towel and cover with a 2nd tea towel, so pastry doesn't dry out. Melt butter and brush each sheet of filo & fold in half. Cut filo into 3rds. Brush with butter again. Place a large teaspoon of filling in corner and fold into triangles. Brush triangles with butter. Place on ungreased tray and bake in Mod over 190 C for 45 mins or until puffed & golden brown. Serve piping hot. (Can use any Seafood).

Rice Coleslaw

3 cups cooked Rice
1 cup grated Carrot
1/2 cup chopped Capsicum
2 cups shredded Cabbage
1 cup Pineapple pieces
1/2 cup chopped Shallots

Dressing:
1/3 cup French Dressing
1/3 cup Mayonnaise or sour Cream
Pinch Ginger
1/2 tspn Sugar
Salt and Pepper

Method: Add dressing to above vegetables and rice, blend well and season to taste. Garnish with extra pineapple pieces and toasted almonds.

Curried Crab Soup

1/2 cup rice
2 onion, chopped
1 tspns finely chopped fresh ginger
4 cups chicken stock
1 large carrot, peeled and grated
salt and pepper to taste
thinly sliced shallots
1 tabspns butter
3 tspns curry powder
1 tabspns flour
1 cup coconut milk or evaporated milk
1 x 170gm can crabmeat or use 1 cup cooked chicken

Method:
Beat butter, onion, garlic and ginger, cook till tender.
Add curry powder stir - cook 1 mins.
Add flour, blend and cook a few minutes.
Add stock and milk gradually, stirring till blended.
Add rice, stir, bring to boil, reduce heat and simmer 30 minutes, drain and flake crabmeat, add to soup season to taste and allow to heat.
Garnish with shallot slices.

Salmon Pate

1/2 cup hot water
1 tbspn gelatine
1 chicken stock cube
22g tin red salmon
4 shallots
1/4 cup mayonnaise
2 tspn lemon juice
salt
pepper
1/2 cup cream or yoghurt
lettuce leaves

Method: Vitamize water, gelatine and chicken stock cube. Add undrained salmon, shallots, mayonnaise and lemon juice, salt and pepper and blend until smooth. Add cream or yoghurt and blend again. Pour into mould or individual moulds. Refrigerate until set. Serve with lettuce leaves with toast triangles or with cracker biscuits.

Chicken & Mushroom Bake

1 tablespoon butter
3 chopped shallots
1 tablespoon plain flour
375ml carnation milk
2 cups cooked chicken
400ml mushroom soup
1/2 cup grated cheese
2 cups cooked macaroni
1/2 cup cornflake crumbs or bread crumbs
2 tablespoons butter

Method: Melt butter and sauté onions until soft. Add flour and cook 1 minute. Stir in milk and soup. Bring to boil. Add chicken, macaroni and cheese. Simmer for 7 minutes. Pour into casserole dish. Crush cornflakes and add to melted butter. Sprinkle on top of casserole with grated cheese. Put into oven and heat through until cheese is melted.

Zucchini Carrot Pancakes

1/2 cup wholemeal plain flour
2 eggs
1/4 cup chopped parsley
1/2 cup milk
1/4 cup water

Filling and Sauce:
15g butter
1 carrot
3 zucchini
60g grated cheddar cheese
60g grated mozzarella cheese
15g butter
3 shallots
400g can tomatoes
1 chicken stock cube

Method: Sift flour, stir in combined eggs, parsley, milk and water. Stand 1 hour. Cook 8 pancakes in hot greased pan.

Fill: pancakes with grated carrot and zucchini[,] add cheese. Roll up firmly and place in heat proof dish.

Sauce: Saute chopped shallots in butter[,] add undrained mashed tomatoes and stock cube, simmer for 15 minutes. Pour over pancakes[,] sprinkle with mozzarella cheese. Grill until melted.

Vermouth Prawn Rolls

200g can prawns, drained and chopped
90g swiss cheese grated
1 tbspn dry vermouth
seasoned pepper to taste
60g melted butter
1 tbspn green shallots, chopped
3 tbspn sour cream

Method: Slice white sandwich bread. Mix together all ingredients except bread and butter. Trim crusts and flattern [sic] out each slice with a rolling pin. Spread the filling mixture on to each slice and roll up tightly. Secure with tooth picks and brush with butter. Place on a baking tray and bake in a slow oven (150C/300F) for 15-20 minutes or until lightly browned. Serve with cheese and chive sauce.
Makes approx. 12.

Salmon Pate

1/2 cup Hot Water
1 Chicken Stock Cube
220 gm Red or Pink Salmon
2 tspn Lemon Juice
1/2 cup Cream
1 tlbspn Gelatine
4 Shallots
1/4 cup Mayonnaise
Salt & Pepper

Method: Put hot water, gelatine & crumbed stock cube in blender, blend on high for 1 minute. Add undrained salmon, roughly chopped shallots, mayonnaise, lemon & salt & pepper, blend for 1 minute. Add cream, blend 30 secs. Pour mixture in lightly oiled containers and refrigerate to set. Serve with lettuce, toast triangle & wedge of lemon.
