6 oz. margarine
1 cup sugar
1 cup plain flour
1 cup S.R. flour
1&1/2 cups sultanas

2 eggs
1 small cup trombone cooked and mashed
Method: Beat marg. and sugar, then add eggs, then flours, trombone, sultanas and essence. Line 7" square tin and bake at 300 deg. 1 hour then at 200 deg. till cooked. Finish top of cake with blanched almonds.

Pumpkin & Corn (in Microwave)
pumpkin (about 1 kg) peeled, diced
60 gm butter
440 gm can creamed corn
1/2 cup cream
2 onions, chopped
3&1/2 cups chicken stock
3 tsp Worcestershire sauce
1 Tbps chopped chives
Method: Combine pumpkin, onions and butter in large bowl, cover and cook on HIGH for 3 minutes. Add chicken stock, cover and cook on HIGH for 25 minutes. Puree in blender or processor, stir in corn, Worcestershire sauce and cream, reheat, sprinkle with chives. Serves 6.

A Good Roast Dinner for Beginners
Choose either a leg of lamb, a loin or forequarter.
If using forequarter slice between ribs and shoulder and cut it off. If left intact it takes longer to cook and is difficult to carve.
A leg needs at least three hours, the others two hours.
Using a frypan put in at least 1&1/2 cups of dripping.
Add 1/2 cup cold water.
Lay meat on top and sprinkle with salt and pepper and a little flour.
Cover and cook at 350F turning after three-quarters of an hour.
Vegetables can either be put in with the meat three-quarters of an hour before serving or at this stage take meat out and put in warm oven. Tip fat out and make gravy.
To make gravy:
After fat has been tipped off sprinkle pan with flour (1 tabspn)[,] turn heat high for a few minutes then add 1/2 to 1 cup cold water and stir well. Let boil a minute.
Pour off into gravy boat and keep hot.
Put the clear fat back into pan and heat. Cut potatoes into slices three-quarters inch thick and lay in hot fat. Turn when brown underneath.
Do the same with pumpkin, par[s]nips and carrots.
They will cook in about 30 minutes.

Lamb in Vermouth
1 leg spring lamb, about 2 kg
Make a marinade of the following:
1 cup sweet vermouth
1/2 cup chicken stock
2 tabspns olive oil
1 tspn salt
1/4 tspn pepper
1 tspn paprika
2 cloves of garlic, finely chopped
1 tspn dried rosemary (or 1 tabspn fresh, chopped)
Method: Marinade lamb, covered, in fridge for 48 hours, turning or basting occasionally.
Before roasting, pat dry very thoroughly with paper towelling. This is important, otherwise the "weeping" sweet vermouth will scorch on the bottom of the pan during cooking and spoil the pan dripping for gravy.
Reserve marinade for gravy.
Place 2-3 tabspns polyunsaturated oil in bottom of roasting tin and roast the lamb on a rack at 180C until well done and tender (allow about 65 mins per kg).
Make gravy by draining off excessive fat from pan, stirring in the marinade to l[i]ft the pan drippings, mixing in 1 tabspn flour to thicken, and bringing to the boil.
Suggested vegetables to accompany - roast potatoes, onions and well-coloured pumpkin and green peas.
Serves 6-8.

Pumpkin & Apple Vichyssoise
750g (1&1/2lb.) butternut pumpkin, peeled, seeded and cut into small pieces
250g. (8oz.) peeled and chopped potato
1 lge. onion
4 cups boiling water
1 Maggi chicken & garlic stock cube
2 green apples, peeled, cored and sliced
1 cup Carnation Evaporated milk
1/4 tspn. nutmeg
Method: In large saucepan combine pumpkin, potato, onion, boiling water and stock cube. Heat until boiling. Reduce heat and cover. Simmer for 15 mins. Add apples, simmer 10 mins. more. Cool slightly. Puree in blender or processor until smooth. Return to saucepan stir in Carnation milk and nutmeg. Do not boil. Serve. Garnished with a pinch of nutmeg, dob of cream and a sprinkling of chopped parsley.

Pumpkin Cake
1/4 lb butter, 7 oz sugar, 1 cup cold cooked trombone (steamed, drained and mashed), 2 Tbls (small) golden syrup, 2 eggs, 2 rounded cups SR flour, pinch salt, 1 level tsp mixed spice, 1 lb mixed fruit.
Method: Cream butter and sugar. Add well beaten eggs gradually, then golden syrup, then the well-drained trombone. Lightly stir in sifted flour, salt and spice, alternately with fruit. Turn into an 8 in. greased cake tin. Cook at 400°[F] for 1.1/4-1.3/4 hours.

Aussie Potato Bake
Equipment Needed
Sharp knife
Beater
Grater
Measuring Cup
Casserole dish
Can opener
Saucepan
Preparation Time: 15 minutes
Cooking Time: 15-20 minutes
Ingredients
Salt and Pepper
2 large Potatoes
3/4 cup grated Pumpkin
1 Onion (chopped)
2 Bacon rashers (chopped)
3/4 cup grated Carrot
1/2 cup grated Cheese
1 Egg (beaten)
1 teaspoon Vegemite
Crushed Cornflakes
Extra Cheese
Method
Peel and boil potato and mash with vegemite and salt and pepper. Mix in rest of ingredients. Place in a casserole dish and top with crushed cornflakes and cheese. Bake at 180C for 15-20 minutes.

Sultana Cake
1 cup S/R Flour
1 cup Plain Flour
1 cup Sugar
1 cup Sultanas
1 cup Mashed Trombone
250 gm. Margarine
2 eggs
Method: Cream sugar and margarine. Add the eggs and then the remainder of the ingredients. Bake in a moderate oven 45 minutes to 1 hour.

Swiss Top
1.1/2 cps. S. R. Flour
1/2 tsp. Salt
1/2 tsp. Celery Salt
Cayenne Pepper
1 oz. Butter
1 cp. cold mashed Pumpkin
1 Egg
1/2 tsp. Lemon rind
little Milk if required
Method: Sift flour, salt and pepper. Rub in shortening, add pumpkin, and lemon rind. Mix to dough with beaten egg and milk. Spread lightly on floured board, press 3/4" thick and put on top of meat. Glaze with egg and milk. Place in hot oven for 15 minutes until puff is well risen and golden brown. This top is O.K. on mince meat, steak and shepherd's pie.

Pumpkin and Prune Cake
250 g butter
1 teaspoon grated orange rind
1 cup castor sugar
3 eggs
1/4 cup orange juice
3/4 cup cold mashed pumpkin
1/2 cup finely chopped mashed prunes
2 cups self-rising flour
1/3 cup milk
Method:
1. Cream butter, orange rind and sugar together until light and fluffy.
2. Add eggs one at a time, beating well after each addition.
3. Stir in orange juice, pumpkin and prunes, then sifted flour alternately with enough milk to give a soft consistency.
4. Spread into greased deep 20 cm round cake tin with base lined with greaseproof paper, oven 1 to 1.1/4 hours.
5. Stand 5 minutes, turn onto wire rack to cool.
Serves 4 (Sweet)

Potato Quiche
500g potatoes
15g butter
salt
pepper
15g butter extra
125g frozen mixed vegetables
125 ham or bacon
1/2 cup grated cheddar cheese
300ml carton cream
2 eggs
Method: Cook potatoes in usual way until tender, drain, mash with butter, salt and pepper. Spread potato evenly over base and side of well greased 23cm flan tin. Place in oven for a short while to harden base. Heat extra butter in pan, add unthawed vegetables and chopped ham or bacon, cook few mins until vegs unthaw. Spread veg mixture over potato base, sprinkle with cheese. Beat cream and eggs together, carefully pour over filling in potato shell. Bake in moderate oven 40mins until golden brown. Stand 5mins before cutting.
Variation: instead of frozen veg, grated carrot and pumpkin, peas and sweet corn may be used.

Marrow Cake
1 tablespoon butter
1 cup cooked mashed marrow
1/2 cup sugar
2 cups S.R. flour
vanilla essence
1 egg
1/2 teaspoon nutmeg
1/2 cup sultanas
1/2 cup milk
pinch salt
Method: Mix marrow, butter and sugar, add egg and essence, then flour and milk alternately. (Zucchini or Butternut can be used instead of marrow). Finally mix in nutmeg and sultanas.
Topping:
120g butter
3/4 cup sugar
1 cup plain flour
cinnamon to taste
Method: Melt the butter and add the sugar. Mix in cup of plain flour and cinnamon to taste. Sprinkle over cake. Bake in moderate hot oven 30-40 minutes.

Sultana-Pumpkin Cake
1 cup sugar
1 cup butter
2 eggs
1 cup cold cooked pumpkin or trombone (not butternuts)
1 cup plain flour
1 cup SR flour
1 cup mixed fruit OR 2 cups sultanas
1 cup sultanas
Method: Beat sugar, butter, eggs, pumpkin until creamy. Add flour and fruit. Bake in a 10 inch square tin at 375F for 40 - 45 mins. Cool in tin before tipping out.

Pumpkin Soup
1 tbspn butter
2 chopped onions
4 cups chicken stock
1 kg pumpkin peeled and chopped
1/2 tspn nutmeg
375mls carnation milk.
Method: Melt butter and fry onion gently 2-3mins. Add stock and pumpkin. Bring to boil and simmer for 20mins or till pumpkin is tender. Puree in blender or sieve. Return to saucepan and add nutmeg and milk. Do not boil. Serve garnished with parsley. Note: instead of stock use 4 cups of water and 1 maggi chicken and garlic stock cube.

Lemon Butter
2 lbs. trombone
2 lbs. sugar
1/4 lb butter or Marg.
4 large lemons
Method: Boil trombone and drain well, and then mash. Melt butter in saucepan. Add grated lemon rind and juice of lemons. Then add trombone and sugar. Boil 1/2 hour, stirring constantly. Bottle and keep air-tight. Will keep indefinitely. May be used as jam.
