5 eggs, separated - beat whites stiff
1 tablespoon gelatine
1/2 teaspoon vanilla
3/4 cup sugar
1/2 cup boiling water
Method: Beat all together. Have whites of eggs beaten very stiff and stir into mixture. Put aside to set -- then spread with apricot jam and whipped cream. Sprinkle with nuts or coconut.
Serve the cream separately -- it is not wasted then if all the trifle is not used immediately.

Apricot Chocolate Gateau
1 x 9" sponge
1/2 pint cream
2 tbs drinking chocolate
1 tsp instant coffee
2 tbs apricot jam
juice of 1/2 large orange or some cointreau
1 tbs icing sugar
Method: Freeze sponge cake, then cut into 3 layers. Place bottom layer on serving plate. Mix orange juice or cointreau with apricot jam and cover bottom layer with half this mixture. Beat cream, drinking chocolate, coffee and icing sugar until just stiff. Cover bottom sponge layer with cream mixture. Put on next sponge layer and cover with jam mixture then cream. Put on top layer and cover entire cake with cream. Decorate with walnuts and grated chocolate. Best made day before required and kept in refrigerator.

Hawaiian Patties
1 lb. minced pork fillets
1/2 lb. minced veal
12 thin pineapple slices
3 level tablespoons apricot jam
1 egg
Pinch nutmeg
Salt and pepper
6 bacon rashers
Method: Mix together the minced meats, 2 tablespoons of the jam, beaten egg, and seasonings. Using a little flour, shape into patties same size as pineapple slices, place one between each two pineapple slices, wrap in a bacon rasher, and secure with a cocktail stick. Brush over with remaining jam. Place patties on greased baking dish; bake in moderate oven 45 minutes.

Cheese and Jam Slice
1 & 1/2 cups plain flour
1/2 tspn baking powder
1/2 tspn salt
1 & 1/2 cups rolled oats
1 cup brown sugar, firmly packed
6 oz butter
4 oz tasty cheddar cheese, grated
3 tabspns apricot jam
Method: Sift flour, baking powder and salt, add next two ingredients. Work in butter till mixture is crumbly. Put half in greased 7" x 11" slab tin. Spread with jam and top with cheese. Press rest of mixture firmly over top. Bake in moderate oven 35-40 mins. Cut into slices whilst hot.

Cold Chicken Curry
2 cooked chickens - diced
Sauce:
2 tblspns vegetable oil
1 tblspns Apricot Jam
2 chopped white onions
1 tblspn fruit chutney
1 tblspn curry
1/2 cup oil mayonnaise
1/4 cup tomato sauce
1/2 cup cream
Method: Heat oil, add onions & cook until softened[,] add curry powder & cook a minute. Remove from heat, add sauce & jam & chutney & leave to cool. Blend this to make a smooth sauce, when cold add mayonnaise & lastly stir through the whipped cream. Stir in diced chicken. Serve.

Rum Balls (uncooked)
9 oz. (approx. 3 cups) cake crumbs
3 tablespoons apricot jam
3 tablespoons cocoa
2 tablespoons water
1 tablespoon rum
2 tablespoons apricot jam extra
chocolate sprinkles
Method: Mix together cake crumbs, cocoa and 3 tablespoons of sieved apricot jam and rum into [sic] a stiff paste is formed. Make into approximately 24 balls. Warm 2 tablespoons of sieved jam with water, dip the balls into this jam mixture, then coat with the chocolate sprinkles. Place in paper patty cases.

Jam'N Oats
1&1/2 cups S.R. flour
1&1/2 cups rolled oats
1 cup apricot jam
1/2 cup brown sugar
3/4 cup shortening
Method: Mix dry ingredients and rub in shortening until crumbly. Put half on bottom and press well. Spread jam, put remainder on top of jam. Bake in moderate oven for 35 minutes.
