Remove the crusts of 1 medium sliced loaf of bread with an electric knife (if available) (25 slices per loaf). Spread margarine or butter on bread all over thinly (don't miss the edges). Place foil over large square serving tray.
Spreads:
curried egg
any Pecks canned paste you desire
1 can Masterfood chicken paste
1 Kraft blue vein cheese which has been creamed with a small packet of Philly cream cheese
Spread each piece of bread evenly with spreads right to the corners. Pack firmly together on tray alternately making a chess board effect. Top each piece of bread with decoration in four sections (bread will later be cut) using thinly sliced glazed cherry, gherkin, stuffed olive and tin[y] pieces of parsley leaves.
To make glace: Put 4 tsp gelatine on top of 100mls of warm water. Stir until dissolved. Spoon over bread until completely covered. Put in refrigerator for a few minutes. If not properly glace, brush on more gelatine with pastry brush over missed spots. Stick half toothpicks all over the bread platter to keep the plastic wrap off the top, then cover with plastic wrap and store in refrigerator. Cut into portions carefully and serve from this tray.
This may be made 2 days before using and it keeps quite fresh.
1 loaf makes 48 small portions.
2 trays 4 pieces of bread by 3 pieces.

Salmon Mousse
2 & 1/2 dessertspn gelatine
1 & 3/4 cups hot water
1 teaspn salt
2 tabspn white vinegar
2 gherkins, finely diced
chopped olives (6)
1 tabspn green pepper diced
1/2 cup mayonnaise
1/2 cup whipped cream
16 oz can salmon
Method: Dissolve gelatine in water, add salt, chill. When slightly thickened beat until consistency of whipped cream. Fold in vinegar, gherkins, olives, green pepper and then mayonnaise, cream and flaked salmon. Mix and turn into fish-shaped mould if you have one. Chill until firm. Turn onto a bed of shredded lettuce and watercress. Garnish with green mayonnaise. Serve with cucumber and tomato salad.

Creative Liver Pate
1 kg chicken livers
250 g butter
3 tabspns brandy
1 onion, chopped
1 red capsicum, chopped
3 rounds ham, chopped
1 tspn salt
1 chicken cube
1 sprig fresh thyme
1 tspn French or Dijon mustard
1/2 tspn fresh nutmeg
fresh ground black pepper
Method: Wash livers. Melt half the butter, add livers and toss. Add onion, capsicum and ham, and toss. Simmer gently 5 minutes. In a separate pan warm the brandy. Turn off the exhaust fan, pour brandy over livers, ignite and shake. Put lid on pan, simmer gently about 10-15 minutes. Remove pan from heat and cool a little. Tip contents into food processor, and add all remaining ingredients - blend till smooth.
Creatively add either walnut pieces, or blanched almonds, or sliced mushrooms or slice stuffed olives or ……
Garnish to serve accordingly.
Note This pate freezes really well, and children love it.

Salami Canapes
8 ozs. sliced Salami Sausage
1-2 eggs (scrambled in a little butter with seasoning and a teaspoon of tomato ketchup to taste)
1 small can Baked Beans
1 small can Potato Salad
Chopped stuffed Olives and pickled onions for garnish
Method: Arrange slices of salami (with skin in place) on rack and place under a hot grill for a few seconds only, when they will curl up round the edges forming small cups. Fill salami cups with filling to taste, e.g. baked beans in tomato sauce, scrambled eggs, potato salad. Garnish with slices of stuffed olives and onions.

Eggstatic Spread
5 hard-boiled eggs, mashed, 3 dspns mayonnaise, 2 tspns vinegar, 1 tspn prepared mustard, 2 dspns chopped olives.
This mixture is suitable for sandwich filling, spread for crackers, or as a dip.

Chicken Savoy
12 ozs cubed chicken cooked, 2 ozs can mushrooms, 2ozs butter, 1 sliced red capsicum, 1 sliced onion, 1 cup white sauce (with 1/2 tspn chopped parsley)[,] 4 olives, 4 slices of buttered toast.
Method: Fry capsicum in butter, add mushrooms and onion. Stir into sauce, add chicken. Pile on toast and garnish with olive.

Rice Salad
Amount of ingredients depending on the number of servings.
Cook rice in salted water. Do not overcook. Drain, and rinse in cold water. Put aside and prepare the following salad into which rice will be tossed.
Sliced mushrooms (1 can)
Sliced artichokes (1 can)
Lamb's tongue (boil, remove skin & chop finely)
Tuna, shredded (1/2 tin)
Stoned olives (chopped)
Anchovies (2 - 3)
Oil, salt and pepper and the juice of 1 lemon.
Mix all ingredients together - including the rice.

Seafood Pie
Crust -
2 cups cooked rice
2 teaspoons curry
1 onion, finely chopped
2 oz. melted butter
Combine all ingredients and press into a greased 9" pie plate.
Filling -
1 medium can Salmon or Tuna, drained and flaked
2 eggs
1&1/2 cups milk
1/2 cup grated cheese
Salt and pepper and squeeze lemon juice
1 Tablespoon chopped parsley
Thoroughly combine all ingredients for filling, and spoon in to prepared crust. Bake in moderate oven 325F 35-40 minutes until set.
Garnish with lemon slices and olives.

Bacon Savouries
2 rashers bacon, finely chopped
2 stuffed olives
1 tbs canned capsicum
3 spring onions, chopped
14 slices of bread
1 cup tasty cheese, grated
2 tbs mayonnaise
1 tbs chopped parsley
1/4 tsp curry
30g melted butter
Method: Cook bacon until crisp then drain. Mix bacon, cheese, olives, mayonnaise, capsicum, parsley, onions and curry. Mix well. Remove crusts from bread. Flatten bread with rolling pin. Spread mixture on bread and roll up and secure with a toothpick. Cut bread in half. Brush with butter. Bake in oven at 180° for 10 minutes. Serve hot.
To freeze: Pack in airtight container for up to two months.
To reheat, place on greased tray and bake in slow oven for 20 minutes.

Crab Triangles
250 gms Filo Pastry
125 gms butter
CRAB FILLING
6 green Shallots
1 tlbspn Madeira or Dry Sherry
2 Hard Boiled Eggs (optional)
1 tlbspn Chopped Olives
45 gms Butter
250 gms Crab Meat
1 Egg Yolk
Salt & Pepper
BECHANNEL [sic] SAUCE
1/3 Cup Milk
Sliced Onion
Few cracked Peppercorns
Some Mace (optional)
1/2 Bay Leaf
45 gms Butter
3 tlbspn Plain Flour
Green Herbs (optional)
Method: Finely chop shallots & saute in butter until softened. Flake crab & remove any bony tissue. Add to shallots with remaining filling ingredients and blend into bacchanal [sic] sauce. Lay filo pastry flat on a damp tea towel and cover with a 2nd tea towel, so pastry doesn't dry out. Melt butter and brush each sheet of filo & fold in half. Cut filo into 3rds. Brush with butter again. Place a large teaspoon of filling in corner and fold into triangles. Brush triangles with butter. Place on ungreased tray and bake in Mod over 190 C for 45 mins or until puffed & golden brown. Serve piping hot. (Can use any Seafood).

Cheese and Asparagus Savoury
2 tbspns butter
1 small tin asparagus tips
salt and pepper to taste
2 tbspns powdered milk
1 cup tasty grated cheese
1 dspn chopped parsley
Method: Cream butter, add powdered milk, salt and pepper and parsley. Lastly mix in drained asparagus. Chill. Spread on savoury crackers and decorate with olive slices.

Cheese Olive Puffs
2 cups grated mature cheese
1 cup plain flour
1/2 cup butter/margarine
1 tsp paprika
salt and pepper
5 dozen stuffed olives (approximately 375g jar)
Method: Combined first 5 ingredients until well mixed and smooth. Take a small piece of cheese pastry slightly larger than the olive and roll into a ball. Make a hole with thumb, pop in an olive and roll to cover. Chill balls in refrigerator until firm, then freeze in a plastic bag until required. Take straight from freezer and place on a baking tray. Bake at 200C (400F) for 15 minutes until golden.

Veal and Chicken Salad

1/2 cup chopped walnuts
1 cup diced celery
1/2 teaspoon salt and pinch of pepper
Lettuce or cabbage leaves
1/2 cup mayonnaise
stuffed olives
Method: Combine all meat, celery and chopped nuts with the mayonnaise and season with salt and pepper. Toss until mayonnaise binds the solids together and spoon mixture onto lettuce or cabbage leaves. Top each serving with a stuffed olive and chill before serving.

Method: Beat first 7 ingredients together until smooth, pipe into mushroom caps. Decorate with sliced olives. Chill well before serving as an hors d'oeuvre.

Orange Appetiser
Method: Remove the pulp from required number of halved oranges & cut into small pieces. Mix with some finely chopped halved walnuts, several minced & stoned olives, & a small proportion of chopped tart apple. Mix 2 tab. sherry with 1 tab. honey, pour over the mixed fruits, stir lightly. Pile into empty orange skins. As an alternative to the sherry & honey dressing, toss the fruits in a good creamy salad dressing mixed with its own quantity of strained orange juice.
