Curried Meat Loaf

3 plums
1 T plum jam
750 g hamburger steak
1 T coconut
2 T sultanas
1 grated onion
2 t curry powder
1 cup breadcrumbs
2/3 cup evaporated milk
1 beaten egg
salt & pepper

Method: Simmer plums in water until tender, remove skin & chop flesh into small pieces. Put meat, plums, jam, coconut & sultanas into a bowl. Fry onion until soft, add the curry powder, stir over low heat for a minute, add to meat. Stir in crumbs, milk, beaten egg, salt & pepper. When blended, turn into a meat loaf tin & bake in a moderate oven about 1 hour. Leave in tin for 5 mins, pour off fat & turn out. Cool loaf & chill well, serve with fruit chutney & rice salad.
Serves 6-8.

Curry Royale

1kg (2 lbs.) lean boneless lamb (cut into small pieces)
2 tablespoons oil
2 onions
2 apples
2 carrots
1 tin pineapple pieces (drained, retain juice)
3/4 cup sultanas or raisins
1 tablespoon curry powder
Salt and pepper
Golden Syrup (1 heaped tablespoon)

Method: Toss lamb in plain flour, heat oil and toss meat into pan, brown. Make sure heat is not too severe -- about 250F. Chop apples, onions, carrots and toss in, add drained pineapple, raisins or sultanas, and sprinkle over curry powder, salt and pepper. Mix well with wooden spoon, tossing more flour over so that it will thicken, add pineapple juice and golden syrup, then add enough hot water to make correct consistency, then simmer until meat is tender. Fresh apricots, plums and grapes can be added to this curry. Bananas with coconut plus chutneys can be served with this curry, but do not add them to the curry as it takes away the flavour.

Lincoln Lamb Stew

2 lamb cutlets
2 onions
2 carrots
1 parsnip
1 piece celery
1 large cooking apple
2 tablespoons oil
3 cups stock
2 tablespoons plum jam
Flour, salt and pepper.
Other vegetables may also be used - cabbage, peas, corn, etc.

Method: Trim chops, coat with seasoned flour. Brown in hot oil. Add chopped vegetables and apple and saute for a few minutes. Add plum jam and stock. Bring to boil, reduce heat and simmer for approximately 1 hour. Thicken if necessary. Serve with mashed potatoes. Increase quantities for larger family.

American Plum Pudding

1 lb can purple plums or 2 cups fresh cooked plums
1 pkt gingerbread cake mix
1/2 tsp salt
1 cup sultanas
1/2 cup chopped walnuts

Method: Drain plums and reserve syrup for sauce. Remove stones from plums and cut into pieces. Prepare cake mix as per packet, add salt and plum pieces. Stir in sultanas and walnuts. Pour into 6 cup cake tin (8" square). Bake uncovered at 370°F about 1 hour. Loosen edges immediately and unmould onto serving plate. (Can be made ahead and reheated when needed.)

Plum Sauce: Combine 1/4 cup sugar, 2 tbs cornflour; gradually add plum syrup. Add enough water to make up to 1.1/2 cups altogether. Cook over medium heat, stirring continually until it boils and thickens. Cook 1 min. Add 1 tbs lemon juice. (Can also be warmed later.)

Serve sauce warm over pudding slices, also serve thin cream.

Plum Soup

4 kg small plums
1 cup white wine
Low fat yoghurt
3 cups low cal lemonade
1 teaspoon mace

Method: Stone plums and stew gently in large pan with lemonade and wine. When cooked add mace. Allow to cool, then puree. Add more lemonade if thinner consistency desired. Refrigerate. N.B. Leftover soup is delicious if set into firm jelly, chopped into pieces and served with vegetable salad.
