No Cook Fruit Cake

8 oz (250g) coffee or arrowroot biscuits
1 T sherry
2 T cocoa
1 egg
1 T full cream dry powdered milk
4 T butter or margarine
1 cup icing sugar
1 cup mixed fruit
pinch salt

Method: Crush biscuits finely, add fruit, sherry, salt, powdered milk & cocoa. Beat egg & sugar together & add to dry ingredients. Melt butter & blend well through the mixture. Press into buttered tin. Allow to set & ice with white icing & sprinkle with coconut.

Chocolate Biscuits - Uncooked

3 Weetbix, crumbled
1 cup plain flour
1 Tbsp cocoa
1 cup sugar
1 cup coconut
1/4 lb margarine, melted

Method: Mix all ingredients together and press into a long, flat, well greased tin. When set ice with chocolate icing and cut into squares.

Amy Johnson Cake

Pastry:
Rub 2 tablespoons butter or margarin[e] into 1 cup of S.R. Flour, sieved with pinch of salt. Add a little milk to make a firm dough. Roll out and line cake tin, one deeper than a swiss roll tin. Spread with plum and raspberry jam and sprinkle with currants.

Cake:
Beat 2 tablespoons butter with small cup sugar, add 2 eggs, and beat well. Add a little milk and 1 cup S.R. Flour sifted with a pinch of salt. Spread cake mixture over currants and bake in a moderate oven.

When cool, ice with lemon icing and cut into oblong pieces.

Apricot Clams

2 eggs
4 cups sugar
6 ozs butter
4 ozs cornflour
3/4 lb S. R. flour
About 4&1/2 doz. dried apricot halves

Method: Soak apricots for 4 hours - cream butter and sugar, add well beaten eggs then add sifted flours. Mix well and then roll out as for biscuits. Cut into rounds, place a piece of apricot sprinkled with sugar on each round and cover with another round of the biscuit mixture. Press edges down and cook in a hot oven for 10 mins. Can be iced if preferred and sprinkled with coconut.

Australia Cake

6 ozs. butter, 6 ozs. sugar, 3 eggs, 12 ozs. S.R. flour, about 6 tablespoons milk, few drops vanilla, raspberry jam, cochineal to colour. Cream butter and sugar till light, add beaten eggs gradually, and beat well. Add sifted flour alternately with sufficient milk to provide a soft, dropping consistency. Put one half of mixture into well-greased cake tin. Spread with raspberry jam. Colour remaining half of mixture pink with cochineal, and spread evenly over jam. Bake in moderate oven 1&1/4 to 1&1/2 hours. Turn carefully on to cake cooler. When cold, ice top - one half pink, the other white. Or use white icing and sprinkle white coconut on the one half, pink on the other (rubbed in drop of cochineal and dried first).

Tea Cups

(This Recipe is from Samantha, Kahlan & Luke's Family)

Lifesavers: musk and peppermint
Marshmallows
Iced round biscuits: Tic Toc's
Icing mixture, bought ready-made

Method: Cut the lifesavers in half. Place the biscuit iced side up, attach a marshmallow using the icing into the middle of the biscuit. Attach one half of the lifesaver to the side of the marshmallow also using the icing.

Hint: The biscuit becomes the saucer, the marshmallow becomes the cup, and the lifesaver becomes the handle of the teacup. Great for playtimes and parties.

Hedgehog Fingers No. 1

1/4 lb. butter, 1/4 lb. sugar, 1 egg, 2 tablespoons cocoa, 1/2 lb. plain biscuits (such as coffee or Marie), 1/2 cup chopped nuts, 3/4 cup sliced raisins or dates (or a mixture), 1/2 teaspoon vanilla.

Method: Work butter, sugar, and cocoa together. Melt in a saucepan, and while still warm add crushed biscuits, beaten egg, fruit, and nuts. Mix well and press into a log tin or similar cake tin that has been lined with greaseproof paper. Level the top and put to set in cool place. When firm, cut into strips or fingers. May be iced if desired. The mixture may also be moulded into small balls while soft and rolled in coconut.

Rainbow Sponge

4 eggs, pinch of salt, 3/4 cup castor sugar, 1 cup plain flour, 1/2 teaspoon cream of tartar, 1/4 teaspoon carb. soda, 3 tablespoons milk, 1 teaspoon butter, 1 scant, dessertspoon cocoa blended with one extra tablespoon warmed milk, cochineal, 3 tablespoons mock cream, warm icing, grated chocolate to decorate.

Method: Separate whites from yolks of eggs, beat whites stiffly with salt. Gradually add sugar and continue beating until all sugar is dissolved. Add egg-yolks. Fold in sifted flour, cream of tartar, and soda. Lastly, fold in hot milk and melted butter. Grease 3 sandwich tins (7 ins.). Pour one-third of mixture in one tin. Colour remainder pink and pour half into second tin. Fold blended cocoa into balance and pour into third tin. Bake 20 to 25 minutes in moderate oven. Join together with mock cream. Ice top with pink icing and decorate with chocolate.

Pineapple Slice

Method: Line a slice tin with Coffee Biscuits. Mix 1 tin Condensed Milk, one 15 oz (500gm) tin of crushed Pineapple (drained), 2 oz Lemon juice, 4 oz melted Copha and 2 oz Passionfruit pulp.

Spread evenly over Biscuits and place another layer of Biscuits on top of filling.

May be iced with Chocolate Icing.

Eggless Jubilee Cake

Method: Pour 1 cup boiling Water over 3/4 cup Sugar and 1 cup mixed Fruit. Let stand for 10 minutes. Add 2 cups SR flour, 1 tsp Cinnamon.
Bake in a greased orange loaf tin (or log) for 30-35 minutes.
Ice while still warm - Lemon-flavoured is nice.

Oriental Delight

2 oz Butter
1/2 cup sugar
3/4 cup SR Flour
1 tbsp Cocoa
4 tbsp Milk
1 tbsp Coffee Essence
1 cup Dates
1/2 cup Coconut
2 Eggs
1/2 cup Walnuts

Method: Beat Butter and Sugar, add Eggs, Milk, Coffee, Coconut, Cocoa, Flour, Dates and Walnuts.

Press the mixture into a greased, shallow tin and bake in a moderate oven (approx. 180°C) for 25-30 minutes.

Ice with Chocolate Icing, sprinkle with chopped Nuts

When cold, cut into fingers or squares.

Iced Vo Vo Biscuits

Sift into a bowl 6oz S.R. flour and rub in 4oz butter, lard or dripping, add 4oz sugar and mix to a firm paste, with 1 egg. Roll out on board to a biscuit thickness and cut in shape. Bake on a greased oven tray in a moderate oven for 20 mins. When cold spread red jam down centre of each one, and ice with pink and white icing down the sides. Place each one face down into cocoanut.

Mock Nougat Bars

1 cup rolled oats, 1 cup sugar, 1 cup SR flour, 1 cup coconut, 1 Tbls golden syrup 4 oz melted butter, 1 egg.

Method: Mix all dry ingredients together, add melted butter, syrup and lightly beaten egg. Mix well. Spread in greased tin and bake in slow oven 20-30 mins. Ice with chocolate icing.

Everybody's Favourite Slice

3/4 cup raw sugar
1 cup wholemeal S.R. flour
1/2 cup coconut
1 cup sultanas

Method: Melt 1 tablespoon honey and 125g margarine and stir into dry ingredients. Press into tray and bake in moderate oven until pale brown. Ice while warm with lemon icing.

Flaky Fingers

1/4 lb butter
1/2 cup brown sugar
2 cups cornflakes
1 cup SR flour
1 cup coconut
salt

Method: Cream butter and sugar well, add dry ingredients. Stir well. Press into greased tin. Bake in moderate oven for 20 mins. Ice when cold.

Jan's Fete Stoppers

6 oz. butter
1&1/2 cups sugar
Cream together, add
3 eggs
6 teaspoons milk
Beaten together, add
4&1/2 cups S.R. flour
1 teaspoon vanilla
500g mixed fruit

Method: Bake in hot oven for 10 minutes. Ice with lemon icing. Makes approximately 80 biscuits.

Apricot Oysters

185g butter or margarine
250g dried apricots
2 eggs
125g cornflour
375g S.R. flour
125g sugar

Method: Cream butter and sugar, then add eggs, then fold in flour. Roll out and cut into small rounds (approx. 5 cm rounds). Place an apricot on each round then cut out more rounds to place on top. Bake in moderate oven for 10 mins. When cool ice with white icing.

Love Cake

1/4 lb. butter
small cup sugar
1 well-beaten egg
1/2 lb. crushed biscuits
3/4 cup chopped walnuts
1 dessertspoon cocoa
1 teaspoon vanilla essence
pinch of salt

Method: Melt butter slowly, take off fire, add sugar and egg, return to fire, cook until very hot but do not boil. (Keep stirring, as it burns quickly). Take off fire, add biscuits, cocoa, salt, walnuts and vanilla and mix well. Place in flat greased tin. Ice with chocolate icing, allow to set, cut into strips when cold. If desired, it can be decorated with chopped nuts, coconut, etc.

Lemon Malt Special

1/2 lb. Coconut
1 tin Condensed Milk
juice 2 Lemons
1 pkt. Malt Biscuits

Method: Line flat dish with half packet of malt biscuits, smooth side down. Mix together the coconut, condensed milk and lemon juice, and spread over the biscuits. Cover with remaining half packet of biscuits, smooth side up. Ice with green icing, or to own taste. Store in refrigerator at least one day before using.

Citrus Carrot Cake

1 cup plain flour
3/4 cup sugar
1/2 tsp salt
2 eggs
225g mandarin segments
3/4 tsp bicarb soda
1 tsp baking powder
1 tsp cinnamon
1/4 cup chopped almonds
1 cup grated carrot

Method: Blend all dry ingredients except nuts and carrots. Add mandarin segments drained and chopped, eggs, oil and mix for 1/2 min. Mix in carrots and nuts. Bake in greased tin 180C for 1 hour. Allow to cool in tin. Ice with cream cheese frosting.
