French Ham Rolls

8 slices of sandwich bread
8 slices of ham
1 tin asparagus cuts
Juice of lemon
Large carton of cream
Grated cheese

Method: Spread bread with butter and mustard. Place ham on bread and roll cornerways. Place rolls in greased oven proof dish and cover with drained asparagus cuts, cream and juice of lemon. Sprinkle liberally with grated cheese. Bake at 375° for 20 minutes. Serves 4.

Terrific Ham and Asparagus Bake

6 thin slices bread, no crusts, buttered
6 slices ham
1 tin asparagus tips, drained
300ml carton cream
Grated cheese

Method: Place one slice of ham on each slice of bread and roll up. Place in ovenproof dish, making sure rolls keep secure. Sprinkle asparagus over rolls and pour cream over evenly. Season if desire. Top with grated cheese and bake in moderate oven 180C or 350F for approximately 15-20 minutes until browned.

Savoury Salmon or Tuna Roll

15 oz. tin or two 8 oz. tins tuna or salmon, 1/2 level tsp. salt, pepper to taste, 2 tbsps. chopped chives, 2 tbsps. chopped parsley, 2 hard boiled eggs (chopped), 1/2 lb. plain scone dough, adding 1 tsp. grated lemon rind to flour.

Method: Flake fish and add salt, pepper, chives, parsley, lemon juice and hard cooked eggs, combine all lightly. Roll scone dough into oblong 1/4" thick, spread with fish mixture, wet edges and roll up from the long side. Place seam edge down on a greased baking dish and pinch ends securely. Glaze with milk or egg and milk. Bake in hot oven 25-30 mins. Serve in 1" thick slices with tomato, cheese or parsley sauce, and individual salads.

Little Steak & Kidney Rolls

750 g round steak 1/2" thick
3 sheeps' kidneys
4 rashers bacon
1 onion, grated
finely chopped parsley
pepper and salt
2 tabspns shortening (1/2 butter, 1/2 oil)
2 tabspns flour
1 tabspn tomato sauce
1/2 tspn nutmeg
1 dessertspn soy sauce
2 cups stock

Method: Trim the steak into pieces 1&1/2 x 4&1/2 inches.
Remove skin from kidneys and slice thinly. Divide the kidney between the steak pieces. Remove the rind from the bacon and chop two rashers small, sprinkle over kidney with a little pepper, salt, onion and chopped parsley. Roll up firmly and tie each with coarse cotton.
Roll in a little seasoned flour.
Heat butter and oil in pan and brown rolls evenly.
Remove rolls and place in a casserole. Add remaining flour and any pieces of parsley, onion, etc. left over.
Brown and add stock, sauces and nutmeg.
When boiling pour over rolls. Cover and bake in a moderate oven for 1&1/2 to 2 hours or until meat is cooked.
Take from the oven 20 minutes before cooking is completed and remove cotton from the rolls.
Cut the remaining bacon into short lengths and roll into small rolls, thread on short skewers and place on top of the meat.
Cook in the oven without the lid for the remainder of the cooking time.
