Pumpkin & Corn (in Microwave)

pumpkin (about 1 kg) peeled, diced
60 gm butter
440 gm can creamed corn
1/2 cup cream
2 onions, chopped
3&1/2 cups chicken stock
3 tsp Worcestershire sauce
1 Tbps chopped chives

Method: Combine pumpkin, onions and butter in large bowl, cover and cook on HIGH for 3 minutes. Add chicken stock, cover and cook on HIGH for 25 minutes. Puree in blender or processor, stir in corn, Worcestershire sauce and cream, reheat, sprinkle with chives. Serves 6.

Tasty Tuna Triangles

170g tin sandwich tuna
130g tin creamed corn
1 tablespoon chopped parsley
1 cup grated cheese
1 egg
6 slices buttered bread

Method: Combine all ingredients (except bread) and mix well. Butter bread and place buttered side down onto a tray lined with gladbake. Spread topping over and bake for 15-20 mins at 180C or until cheese has melted. Cut into triangles or fingers to serve. Makes 12 pieces.

Variation:
Substitute tuna with 1 cup of chopped ham or bacon.

Hint:
Not suitable to freeze.

Helena's Tuna Mornay

125g butter
1 cup plain flour
1 litre milk
1 onion, finely chopped
1 large tin tuna in brine, drained
1 large tin creamed corn
250g grated cheese
1 tablespoon mixed herbs
1 tablespoon ground pepper
1 teaspoon salt

Method: Melt butter and fry onion until golden, add flour and stir for a minute. Add milk slowly using a whisk, and simmer, whisking until thickened and smooth. Season to taste. Add remaining ingredients and cook through, stirring until hot.

Hint: Serve with wholemeal toast.

Super Kids Tarts

wholemeal bread slices
1 egg white
2 Tblsp TONE skim milk

Method: Cut circles from bread to fit into metal patty tins. Beat egg white and milk in a bowl. Brush both sides of bread circles with the milk mixture and press into lightly oiled patty tins. Bake at 190°C until crisp and golden. Use any of the following fillings or make some of your own choice:

Tuna: fill tarts with tuna (preheated), and top with sprinkle of grated LF [low-fat]-cheese. Place under griller to melt cheese.
Baked Beans: fill tarts with hot baked beans.
Ham and Corn: dice a little lean ham and stir into canned creamed corn. Heat this mixture then fill tarts.
Banana: heat mashed banana, sultanas and 1 Tblsp of fruit juice in a saucepan and serve in hot tarts.

Tuna Cheddar Chowder

2 cups boiling water
salt
1 large diced potato
1/2 cup carrots and celery
1 small chopped onion
1/4 cup butter
1/4 cup flour
2 cups milk
3/4 lb. sharp cheddar cheese (shredded)
6&1/2 oz. Tuna
8 oz. sweetcorn (cream style)
pinch rosemary
pepper
chopped chives

Method: Cook vegetables in boiling salted water until tender. Add flaked tuna, sweetcorn, pepper and rosemary. Prepare cheese sauce using above ingredients and add to make chowder. Thicken by heating. Serve with chopped chives.

Creamed Corn Scrambled Eggs

1/2 cup chopped ham
1 tablespoon bacon fat
4 eggs well beaten
1/2 teaspoon salt
1/4 teaspoon black pepper
1.1/2 cups creamed corn

Method: Fry ham in bacon fat until browned. Mix together eggs, salt, pepper and corn. Pour into frypan and cook over low heat, stirring frequently until just set.

Carrot and Corn Mornay

3 tbspn margarine
3 tbspn plain flour
3 cups milk
large tin creamed sweet corn
1 cup grated cheese
6 medium carrots
1 cup cooked peas

Method: Cook carrots and mash. Melt margarine over low heat, add flour, stir in milk, little at a time, add sweet corn then mix in carrots, peas, cheese and salt and pepper.

Crusty Corn Souffle

60g. butter
1 x 453g. can Creamed Corn
salt and pepper
egg whites (4)
3 tablespoons flour
4 egg yolks
chopped parsley
grated parmesan cheese - 1 tablespoon

Method: Melt butter in a medium sized saucepan, remove from heat. Stir in flour and creamed corn. Return to heat and stir for 1 minute. Cool a little, add egg yolks, one at a time, beating mixture well. Add salt, pepper and parsley. Whisk egg whites until stiff, fold into mixture quickly and lightly. Pour into an ungreased soufflé dish. Sprinkle with parmesan cheese. Bake for 45 minutes or until well risen and golden. Serve immediately.

Chicken & Corn Soup

2 x 40g packets Chicken Noodle Soup Mix
1.1/2 litres water
2 x 420g cans creamed corn
2 eggs beaten (omit for egg-free recipe)
1 cup sliced spring onions
Salt and pepper

Method: Place soup mix, water and creamed corn into a saucepan and bring to the boil. Simmer for 5-10 mins, stirring occasionally. Turn off heat and drizzle beaten egg into mixture while stirring. Add onions and season with salt and pepper to taste.

Hints: Extra noodles can be added. Serve with French sticks. Not suitable to freeze.
