Method: Beat marg. and sugar, then add eggs, then flours, trombone, sultanas and essence. Line 7" square tin and bake at 300 deg. 1 hour then at 200 deg. till cooked. Finish top of cake with blanched almonds.

Special Chocolate Cake
1&1/2 cups SR flour, pinch salt, 1 cup sugar, 1 rounded healed dspn cocoa, 1 tspn each instant coffee, ginger and cinnamon. Put dry ingredients in a bowl, add to this 1 egg and 1/2 cup milk, 1 dspn jam, 1/4 lb melted marg. Mix and then add 1/2 cup boiling water and 1/2 tspn carb soda. Bake 350 deg Gas 35 mins.

No Cook Fruit Cake
8 oz (250g) coffee or arrowroot biscuits
1 T sherry
2 T cocoa
1 egg
1 T full cream dry powdered milk
4 T butter or margarine
1 cup icing sugar
1 cup mixed fruit
pinch salt
Method: Crush biscuits finely, add fruit, sherry, salt, powdered milk & cocoa. Beat egg & sugar together & add to dry ingredients. Melt butter & blend well through the mixture. Press into buttered tin. Allow to set & ice with white icing & sprinkle with coconut.

Economical Fruit Loaf
(Eggless and butterless).
Soak 1 Cup All-Bran in 1 Cup of Milk for 1 hour.
Then add 1 Cup of Mixed Fruit; 1 Cup of Brown Sugar; 1 Cup SR Flour. Grease tin well and bake in moderate oven.

Pearl Cakes
6 oz butter, 4 oz sugar, less 1 dsp, 1 egg, 1 cup flour, 1 tsp. baking powder, 1 cup dates, cherries, walnuts, and roll teaspoonfuls in cornflakes.

Christmas Cake (simple to make)
1 lb. butter.
1 lb. brown sugar.
10 eggs.
Beat well until creamy.
1 heaped tablespoon syrup or marmalade jam.
1 oz. butter.
1&1/2 wineglasses of whisky.
In saucepan, brown sugar and butter, add whisky gradually -- will soften eggs and sugar and butter mixture when added.
Approx. 3 lbs. fruit, consisting of:
1/2 lb. raisins.
1 lb. mixed fruit.
1/2 lb. sultanas.
1/4. lb. dates.
1/4. lb. cherries.
1/4. lb. almonds.
1/4. lb. lemon peel.
More fruit may be added if desired, such as figs, ginger, etc.
Add alternately with fruit, 1&1/2 lb. plain flour, 1 teaspoon spice, pinch cinnamon, ground cloves, nutmeg.
Method: Bake in slow oven at 300 degrees [F] for first hour, then reduce heat to 200 degrees [F] for further 2 hours. (This quantity will fill one 8" and one 6" square tin.)

Light Birthday Cake
4 ozs. S.R. flour.

All in Together Chocolate Cake
30oz Butter
6oz Castor Sugar
2 level tablespoons Cocoa
80z S.R. Flour
2 Eggs
1/2 teaspoon Vanilla
1/2 teacup Milk
Method: Melt butter.
Put all ingredients into a large basin. Pour in melted butter.
Beat well for 3 minutes.
Bake in moderate oven, 30 minutes in two 7" sandwich tins or use one 7&1/2" square tin and bake for 3/4 hour or longer.

Amy Johnson Cake
Pastry:
Rub 2 tablespoons butter or margarin[e] into 1 cup of S.R. Flour, sieved with pinch of salt. Add a little milk to make a firm dough. Roll out and line cake tin, one deeper than a swiss roll tin. Spread with plum and raspberry jam and sprinkle with currants.
Cake:
Beat 2 tablespoons butter with small cup sugar, add 2 eggs, and beat well. Add a little milk and 1 cup S.R. Flour sifted with a pinch of salt. Spread cake mixture over currants and bake in a moderate oven.
When cool, ice with lemon icing and cut into oblong pieces.

Australia Cake
6 ozs. butter, 6 ozs. sugar, 3 eggs, 12 ozs. S.R. flour, about 6 tablespoons milk, few drops vanilla, raspberry jam, cochineal to colour.
Cream butter and sugar till light, add beaten eggs gradually, and beat well. Add sifted flour alternately with sufficient milk to provide a soft, dropping consistency. Put one half of mixture into well-greased cake tin. Spread with raspberry jam. Colour remaining half of mixture pink with cochineal, and spread evenly over jam. Bake in moderate oven 1&1/4 to 1&1/2 hours. Turn carefully on to cake cooler. When cold, ice top - one half pink, the other white. Or use white icing and sprinkle white coconut on the one half, pink on the other (rubbed in drop of cochineal and dried first).

Boiled Pineapple Fruit Cake
1 x 450g can crushed pineapple
125g marg.
375g mixed fruit
1 cup sugar
1 tspn. mixed spices
pinch salt
1 cup S. R. flour
1 cup plain flour
1 tpsn. bicarb. soda
2 beaten eggs
Method: Boil first 6 ingredients and also the soda in a saucepan for 10 mins. Allow to cool. Add sifted flours and eggs. Place mixture in an 18cm square cake tin (or as desired) lined with greaseproof paper. Cook for 1 hour at 160°C. Test with skewer. Leave in tin 5 mins., then turn out on rack. Cool. Store in airtight container.

Frangipanni Cake
Cake: 1/2 cup butter, 1/2 cup sugar, 2 egg yolks, 1 large cup S.R. flour, pinch of salt, about 2 tablespoons milk, 1/2 teaspoon vanilla, grated rind of 1 small orange.
Topping: 2 egg-whites, 2 tablespoons sugar, 1/2 cup coconut.
Method: Beat butter and sugar to a cream, and beat in egg yolks. Stir in sifted flour, milk, vanilla, and rind. Place mixture in well-greased and lightly-floured tin. For the topping, whisk whites of eggs to a stiff froth and beat in sugar until stiff again. Then stir in the coconut. Spread on top of first mixture and bake in moderate oven about 40 minutes. Cover with paper if necessary to prevent burning of the macaroon top.

Rainbow Sponge
4 eggs, pinch of salt, 3/4 cup castor sugar, 1 cup plain flour, 1/2 teaspoon cream of tartar, 1/4 teaspoon carb. soda, 3 tablespoons milk, 1 teaspoon butter, 1 scant, dessertspoon cocoa blended with one extra tablespoon warmed milk, cochineal, 3 tablespoons mock cream, warm icing, grated chocolate to decorate.
Method: Separate whites from yolks of eggs, beat whites stiffly with salt. Gradually add sugar and continue beating until all sugar is dissolved. Add egg-yolks. Fold in sifted flour, cream of tartar, and soda. Lastly, fold in hot milk and melted butter. Grease 3 sandwich tins (7 ins.). Pour one-third of mixture in one tin. Colour remainder pink and pour half into second tin. Fold blended cocoa into balance and pour into third tin. Bake 20 to 25 minutes in moderate oven. Join together with mock cream. Method: Separate whites from yolks of eggs, beat whites stiffly with salt. Gradually add sugar and continue beating until all sugar is dissolved. Add egg-yolks. Fold in sifted flour, cream of tartar, and soda. Lastly, fold in hot milk and melted butter. Grease 3 sandwich tins (7 ins.). Pour one-third of mixture in one tin. Colour remainder pink and pour half into second tin. Fold blended cocoa into balance and pour into third tin. Bake 20 to 25 minutes in moderate oven. Join together with mock cream. Ice top with pink icing and decorate with chocolate.

Chocolate Almond Gateau
1 x 8" sponge cake
1/4 pint strong coffee
1-2 tbs Tia Maria
Filling:
3 oz butter
1 egg yolk
1-1&1/2 oz cocoa
1-2 tbs strong coffee
3 oz sieved icing sugar
2-3 oz blanched ground almonds
To decorate:
Carton of cream
Grated chocolate
1-2 tbs Tia Maria
browned chopped almonds
Method: Line a cake tin (same diameter as the sponge) with greaseproof paper. Cut cake into 3 layers and put one into the tin. Mix the coffee and Tia Maria and moisten the bottom layer of cake.
Cream butter and add all ingredients of filling to give a soft consistency and spread half over cake. Cover with a second layer of cake and moisten with coffee mix, cover with remaining filling mix. Put on third layer of cake and moisten with rest of coffee mix. Cover with greaseproof paper and then a plate. Leave in frig at least several hours (can be days) then turn out when ready to decorate. Whip cream, add Tia Maria and spread all over cake. Decorate with almonds and chocolate.
