1 pkt French onion soup, 1/2 tsp mustard, 10 oz water, 1/2 cup tomato sauce, 3 tspn worcestershire sauce.
Method: Place soup mix and mustard in a saucepan and blend in the water. Stir until boiling and simmer 5 mins. Add tomato and worcestershire sauce. Chill until ready to serve. Use on steak etc. or use as a dip with cocktail frankfurts.

Barbeque Fruit Sauce
3/4 cup onions, finely chopped
3 tsp prepared mild French mustard
8 peach halves, cooked or canned
120ml peach juice (no added sugar)
50ml white wine vinegar
1/2 cup tomato sauce
2 tsp W'stershire sauce
Method: Cook onions over low heat, stirring frequently for 2 minutes. Add vinegar, mustard and W'shire sauce and stir for 3 minutes. Stir in peaches, juice and tomato sauce, reduce heat and simmer until mixture thickens, 15-20 minutes.
This is delicious served over boned and skinned chicken.

A Delicious Pudding Sauce
One cup cream, 1 cup sugar, 3 pints milk, 1 egg (well beaten), 1 dessertspoon butter, 1 teaspoon cornflour. Boil all together to a syrup, then take from the fire and add a small glass of wine and nutmeg.

Jamie's Honey Sauce
Put 2 tablespoons honey in saucepan and heat until brown and boiling. Add all following ingredients, which have been blended in cup:
1/2 cup water
2 teaspoons cornflour
2 teaspoons lemon juice
oregano
2 teaspoons soy sauce
4 teaspoons tomato sauce
pinch curry powder or chilli
Mix thoroughly and simmer for 1 minute. Good over steak, meat balls, etc.

Fluffy Brandy Sauce
1 egg
3/4 cup icing sugar
Pinch salt
1/2 cup cream (then whip)
3 tablespoons brandy
Add salt to egg white and beat till stiff, gradually beat in sifted Icing Sugar, 1 dessertspoon at a time. Beat in egg yolk, fold in whipped cream. Flavour with brandy and chill. (Makes 1&3/4 cups).

Egg Nog Sauce for Plum Pudding
2 eggs
1/2 cup sugar
1 dessertspoon rum
3/4 cup cream
1 teaspoon vanilla
Nutmeg
Method: Separate whites and yolks. Beat each with 1/4 cup sugar. Combine the 2 mixtures and fold together. Whip cream with vanilla and rum. Fold into egg mixture. Sprinkle with nutmeg. Refrigerate in a bowl with lid on. Can be made for 2 or more days before needed.
Caution: Before beating egg whites be sure to rinse beater well with hot water to remove any trace of oil or grease, otherwise whites will not whip to a peak.

Celery Sauce
1 head of celery
1/2 oz. margarine
1 oz. flour
1 cup milk
Seasoning
Method: Break up the sticks of celery and cover with cold water in a saucepan. Boil, and then throw away the water. Replace it with milk and boil again. Rub this through a hair sieve. Meanwhile melt the margarine and work in the flour, smoothly. Add the two together and put in seasoning to taste.

Seafood Cocktail Sauce
1 tin whipped evaporated milk
juice 4 lemons
1/2 tspn salt
pinch cayenne pepper
pinch nutmeg
2 tabspn Worcestershire sauce
3 packets tomato puree
(cream can be added)

Sauce Balzac
3/4 cup mayonnaise
1/3 cup tomato sauce
1/4 cup brandy
few drops tabasco sauce
pinch curry powder
Method: Combine all ingredients. Mix well. Ideal for seafood.

Sweet & Sour Sauce to Serve with Prawn Coc[k]tails
1/2 cup unsweetened pineapple juice, 2 teas. cornflour, 3/4 cup water, 2 tabs. tomato sauce, 1 tabs soy sauce, 2 tabs. white vinegar, 1 chicken stock cube.
Method: Mix all to-gether and stir until boiling, Reduce heat and simmer uncovered for 3 mins. Cool.

Mayonnaise
1 cup sugar
3/4 tbspn mustard
1 egg
1 tbspn flour
1 tspn salt
Method: Mix in a saucepan. Heat whilst you add 1.1/2 cups milk and mix. Add 1 cup white vinegar gradually while stirring. Stir till thickens. Add a nut of butter.

Delicate Mustard Sauce
425g can chicken broth
1/2 to 1 teaspoon Dijon mustard to taste
1 tablespoon lemon juice
3 egg yolks
Method: Place chicken broth in saucepan and simmer until broth is reduced to 1.1/4 cups. Beat egg yolks, add lemon juice and 1/2 cup reduced broth stirring constantly to avoid lumps. Gradually pour egg yoke [sic] mixture into remaining chicken broth stirring and heating until thickened. Remove from heat. Add mustard to taste. Serve warm and use as a dip for cocktail frankfurts.

Pintadeau Sauce (for Roast Poultry or Pork)
Method: Place in saucepan:
2 tablespoons malt vinegar
2 tablespoons brown or raw sugar
2 crumbled chicken cubes
1 cup water
black pepper
peeled zest of 4 oranges and 3 lemons (use potato peeler)
1/2 cup orange juice
1/4 cup cherry brandy.
Simmer for 15 minutes and let stand for another 10 to 15 minutes. Strain and add:
grated zest of 2 small oranges and 1 lemon
1 level teaspoon Vegemite
Thicken with a little cornflour mixed with water. Add:
2 heaped tablespoons seeded raisins
1 jar drained pitted sour cherries
1 tin drained whole apricots
1 tin preserved figs
1 tablespoon brandy
thin slices of 2 large oranges blanched in boiling water and peeled
Set aside until serving time, then add 2 or 3 tablespoons of toasted almonds and enough brandy to adjust to own taste. Serve with little new potatoes and green French salad. This sauce can be prepared a day or two beforehand if wished.

Horseradish (& Mock Horseradish) Sauce
Wash well and scrape 1/2 kg horseradish and put through a mincer. Add 1 tin sweetened condensed milk, pepper, salt and mustard to taste and about one cup of vinegar.
Mock Horseradish Sauce: A white turnip scraped and mixed with a little mustard, vinegar and milk is an excellent substitute for horseradish sauce.
