Chilled Tomato Cases

6-8 small-medium tomatoes
200g cottage cheese
1 tablespoon gherkin relish
1 tablespoon Continental Savoury Chicken Supreme Soup

Method: Cut a slice off the end of each tomato and using a spoon scoop out most of the flesh. Chop tomato pulp and mix with cheese, gherkins and soup mix. Season inside of tomato cases with salt, pepper and a little sugar. Pile mixture back into cases. Replace lid or decorate as desired. Chill and serve.

Tuna Boats Entree

4 medium zucchini
1 425g. can chunk style tuna, drained
1 cup grated cheddar cheese
1/2 cup cream
2 teaspns. paprika
2 tomatoes, sliced for garnish

Method: Par-boil zucchini for 5-6 minutes. Remove a slice from the side of each zucchini. Scoop out flesh and chop. Combine flesh with tuna, cheese and cream. Spoon into zucchini boats and sprinkle with paprika. Bake in the centre of oven 180C for 15 mins. Garnish with tomato slices.

Baked Grapefruit

3 large grapefruit.
1 cup crushed pineapple.
Brown sugar.
Sherry.
6 cherries or pieces of crystallised ginger.

Method: Cut the grapefruit into halves and cut out the pulp. Carefully remove the seeds and coarse membranes and chop pulp. Put into a bowl with the crushed pineapple and sherry and leave until ready to bake. Place grapefruit shells in an oven-proof dish and fill with mixture. Sprinkle top with the brown sugar and a dot of butter. Bake 10 mins., until hot and bubbling. Be careful not to burn tops. Serve at once, garnished with cherries or ginger.

Seafood Cocktail

4 tablespoons tomato sauce
2 tablespoons worcestershire sauce
1 dessertspoon sugar
Juice of one lemon
Juice of one tomato
One small tin oysters and juice
One small tin crayfish
Pepper and salt to taste.

Fruit Curry

1 pint of good curry sauce
1 cupful pineapple cut into large cubes
1 cupful peaches cut into thick slices
1 cupful apple cut into dice
Any other fruit desired, making about 4 or 5 cups full
1/4-lb. cooked rice
1 hard-boiled egg yolk
Chopped parsley
1 lemon

Method: Place the fruit in the curry sauce and cooked gently until tender. Arrange the rice in a border on a flat entree dish. Place the curry in the entree [sic], sprinkle a hard-boiled yolk of egg thickly over it, and garnish with thin slices of lemon and finely chopped parsley. Serve hot as an entree or luncheon dish.

Mock Oysters

To a pint of corn pulp add enough fine breadcrumbs to hold the mixture together. Add 1/2 teaspoon baking powder and sufficient salt and pepper to flavour. Drop the mixture from a teaspoon into hot fat, making each about the size of an oyster. Fry a light brown, drain on paper, and serve hot.

Avocado Carbonara

1&1/2 cups small spiral pasta, 2 rashes [sic] bacon, 2 tabs. butter, 1 Avocada [sic] (diced), 60gm cheddar cheese grated, 4 tabs. crea[m], 1 egg, pepper to taste

Method: Cook pasta in slightly salted boiling water. Saute bacon in butter, add the avocado, the drained cooked pasta, cheddar cheese, cream[,] egg and pepper - mix thoroughly to-gether. Heat through and serve on a heated plate. Serves 4 as an entree. Freezes wel[l]. Egg is not necessary. Sliced mushrooms, cooked with bacon and added is tasty.

Pears in Tarragon Cream Dressing

(as an entree or sweets)

4 ripe juicy pears
Paprika
Lettuce leaves

Dressing:
1 egg
2 tablespoons castor sugar
1/4 pint cream
3 tablespoons tarragon vinegar
Salt and pepper

Method: Prepare dressing -- break egg into bowl and beat. Add sugar and gradually add vinegar. Stand bowl in saucepan of simmering water, stir until mixture begins to thicken, then remove from heat -- stir until slightly cool, season and chill. Whip cream and fold into dressing. Peel pears, cut in halves, lay each half on lettuce leaves. Before serving, coat eash [sic] pear half with 2 tablespoons dressing -- garnish with paprika on top.

Banana and Ham Entree

2 bananas
6 slices ham
1 tablespoon lemon juice
1 tablespoon prepared mustard

Cheese sauce:
2 tablespoons butter
2 tablespoons flour
1/2 teaspoon salt
1 cup milk
1/2 cup grated cheddar cheese
Pinch cayenne

Method: Melt butter in sauce pan and stir in dry ingredients. Add milk and bring to boil stirring constantly. When sauce is smooth and thick, add cheese. Pour sauce over rolls and bake at 350F until brown approx. 15 mins. rolls.

Peel bananas, cut into halves lengthwise. Dip bananas in lemon. Spread mustard on one side of slices of ham, and roll around banana half, secure with toothpick. Arrange in greased dish. Cover with sauce.

Asparagus Ham Rolls

4 thin slices ham (or corned beef)
small can asparagus spears
milk
500 g (16 oz) can cream of asparagus soup
30 g (1 oz) cheese
60 g (2 oz) butter or margarine

Method: Grease a shallow ovenproof casserole. Drain asparagus and divide into 4 equal bundles. Roll a slice of ham around each bundle and lay in a casserole dish. Add enough milk to asparagus liquid to make 2/3 cup, then mix with asparagus soup. Pour over ham rolls. Grate cheese and sprinkle on top, dot with butter, and bake in a moderate oven (180C - 350F) for 20 minutes or until lightly browned.

Salmon Entree

1 can salmon, drained
1 cup finely chopped celery
Sauce:
1/4 cup mayonnaise
1/4 cup semi whipped cream
1/2 cup tomato soup
1 tsp worcester sauce
1 tsp lemon juice
1/4 tsp curry powder
salt & pepper

Method: Mix all the sauce ingredients together the day before required. Mix the salmon and celery and serve in champagne saucers or small sweet dishes lined with lettuce leaves. Pour sauce over when serving, decorate with lemon slice. [Serves 6-8]

Asparagus Mousse

2 x 16oz cans asparagus spears
3/4 pint cream
3 egg whites
2 tbs gelatine
6 tbs water
salt & pepper
green colouring
Garnish: asparagus, tomato

Method: Drain asparagus and puree, then put through a sieve. Sprinkle gelatine over water, leave 5 mins and then dissolve over low heat. Add to puree, stirring constantly. Cool until mixture begins to thicken around edges. Whip cream lightly and carefully stir into asparagus until smooth. Season to taste. Fold in stiffly beaten egg whites and tint a delicate green with food colouring. Pour into 3 pint mould which has been rinsed with cold water. Cover with either foil or plastic wrap and chill. For a dinner party can be set in individual serving dishes. [Serves 6]

Tomato & Apple Juice

1 lge can tomato juice
1 lge can apple juice

Method: Serve in small glasses. Half fill with tomato juice, then, tipped glass slightly, add the apple juice very slowly. It will stay on top of the tomato juice. Top with a sprig of mint. [Serves 6]

Avocado and Chicken

1.1/2 cups chopped cooked chicken 
1/4 cup chopped green pepper 
3/4 cup diced pineapple (tin) 
1/3 cup mayonnaise 
1 tbs lemon juice
3 medium avocadoes 
1/2 tsp salt 
lettuce leaves 

Method: Mix all ingredients together and chill. Cut avocadoes in half, brush with lemon juice. Fill halves with mixture and serve in a lettuce leaf. 

Prepare on the day of the dinner party. [Serves 6]

Florida Cocktail

Equal quantities of canned mandarin quarters and grapefruit pieces (or pineapple)
Kirsch or Sherry

Method: Combine fruit and liquor at least 2 hours ahead. Mix well, place in compote dishes and decorate with cherry and mint leaves.

Orange & Tuna Cocktail

3.1/2 oz can tuna
1 tbs spring onions
mayonnaise
1 cup fresh orange sections
salt & pepper
1 dsp orange juice
parsley & lemon for garnish

Method: Drain tuna and flake into chunky pieces with a fork. Add orange sections (drained), onion and orange juice. Toss lightly to mix, season with salt & pepper to taste. Serve in small sweets dishes or seafood cocktail glasses with a spoonful of mayonnaise on top, and garnish with a sprig of parsley and a slice of lemon. May be made early in the day - except for mayonnaise and garnishes. Leave in frig with dishes covered with plastic wrap. [Serves 6]

Prawn & Grapefruit Cocktail

200g tin prawns
200g tin grapefruit OR 1 fresh grapefruit
1/4 pint reduced cream
1 tbs tomato sauce
3 drops Tabasco (optional)
1 tbs brandy
1 tbs lemon juice
1-2 tsp horseradish
salt & pepper

Method: Empty prawns from tin and rinse in cold water - drain well. If using fresh grapefruit, remove pith and skin, then dice fruit and mix with prawns. Pour over brandy and lemon juice and leave to marinate for an hour at least. Meanwhile, mix all other ingredients to make sauce - pour off excess juice from prawns, etc. and mix with sauce. Serve garnished with parsley or a prawn or a grapefruit segment. Serves 4.

Fresh Pear Cocktail

3 sticks celery, chopped finely
12/ cup spring onions, chopped finely
1 red apple, diced
2 firm pears, diced
1/2 cup raisins
4 oz spring onion cheese, sliced and cut into small squares
Combine in a bowl carefully.

1/4 cup French dressing
1 tsp finely chopped fresh mint (optional)
salt & freshly ground black pepper

Method: Arrange in serving dishes and pour over dressing.[Serves 6]

Strawberries in Blue Vein Sauce

5-6 Berries per serve
1 portion Blue Vein Cheese
Mayonnaise

Method: Beat mayonnaise and blue vein cheese, adding enough mayonnaise to make a creamy sauce.

Serve in champagne glasses. Put a portion of lettuce leaf in each glass, add washed and de-stalked strawberries and pour over small quantity of sauce. (Not too much as sauce is fairly rich.)

Sauce may be made and strawberries prepared early in the day. Put into glasses a couple of hours before serving. [Serves 6]

Tuna Grapefruit Cocktail

2 Grapefruit
105g (3.1/2oz.) tuna drained
Pinch salt, cayenne pepper
1 teaspoon lemon juice
3 tablespoons mayonnaise
2 teaspoons chopped parsley

Method: Cut grapefruit in half, cut between the sections and remove the pulp and drain. Flake the tuna and mix with the grapefruit pulp, salt, cayenne pepper and lemon juice and mayonnaise. Chill. Fill the grapefruit cases with mixture and sprinkle with chopped parsley.
