8 oz. S.R. flour
Pinch salt
2 oz. butter or margarine
3/4 cup milk
3 oz. of tasty cheese
Method: Sift flour and salt into bowl. Add 1 oz. of butter and rub in well. Make a hollow in bottom of the bowl and add the milk. Mix with a round-top knife until a soft dough is formed. Tip on to a lightly-floured board. Knead until the underside is smooth. Roll out to about 1/2 inch thick. Cut with plain 1&1/2" cutter. Place in a shallow round 8" sponge tin, close together. Pat over the Cheese Sauce. Place the remaining butter in a saucepan and melt. Don't brown. Add cheese and stir twice. Pour sauce on scones and spread. Cook for 15 minutes Gas oven 425°, Electric 550°.

Kidney Stuffed Mushrooms
125gm chopped lamb kidneys
6-8 med. mushrooms (remove stems and chop finely)
2 rashers of bacon chopped finely
1 chopped onion
2 small teaspoon worcestershire sauce
2 tabs. chopped parsley
1/2 cup grated mixed tasty and cheddar cheese
1 teas. soy sauce
Method: Combine chopped kidneys, bacon, onion and mushroom stems and sauces. Cook on High 4 minutes stirring once. Stir in half parsley mixture, place mixture in mushroom caps. Cook on High 4 minutes or until cheese is melted, after topping with remaining parsley cheese mix.

Bacon Snacks
Mix together: 1/2 lb tasty grated cheese, 2 dspns Worcestershire sauce, 2 well-beaten eggs, 2 tspns melted butter, salt to taste, dash cayenne pepper.
Keep in refrigerator until needed. When required, lightly butter as many slices of bread as desired, spread with mixture & cut into finger lengths. Place strip of bacon on each finger & bake on oven-slide or scone-tray for about 10 mins until golden brown. Serve hot.

Asparagus Cheese Sandwich
30g butter
1 tspn. french mustard
4 slices bread
340g can asparagus spears, drained
3/4 cup grated tasty cheese
2 chopped shallots
paprika
Method: Combined butter and mustard in dish, cook on HIGH 30 seconds. Brush bread on both sides with mustard butter. Place two slices bread on flat dish, side by side. Place asparagus on top, cover with about 1/2 cup of cheese, top with remaining bread. Combine remaining cheese with shallots, sprinkle over bread, sprinkle lightly with paprika. Cook on HIGH 2 minutes or until cheese is melted.

Mince and Tomato Scrapple
Equipment Needed:
Sharp knife
Measuring cup
Can opener
Saucepan
Preparation Time: 15 minutes
Cooking Time: 10 minutes
Ingredients:
500g Minced Beef
1 tablespoon Oil
1 large can Tomato Soup
1/2 cup Water
2 Carrots (grated)
1/2 cup grated Tasty Cheese
3 cups left over cooked Pasta or Spaghetti
Method: Brown mince in hot oil. Add soup, water, onions, carrots and pasta. Cover and simmer for 10 minutes. Serve sprinkled with cheese accompanied by crusty bread and salad.

Lebanese Nibbles
2 ozs. Butter

Lebanese Bread
Method: Mix above ingredients and spread thinly on inside of split bread. Snip into triangles with scissors. Place on trays and bake in moderate oven about 10 minutes (150°C).

Instant Salmon Pie
Equipment Needed:
Mixing bowl
Grater
Cup
Beater
23 cm Tart plate
Preparation Time: 15 minutes
Cooking Time: 35 minutes
Serves 6
Ingredients:
125 grams (1/2 packet) Cheese Jatz biscuits (roughly crushed)
3 Eggs (lightly beaten)
1/2 cup Milk
1/2 cup Plain Flour
1/2 teaspoon Baking Powder
60 grams Butter (melted)
1/2 cup grated tasty Cheese
285 gram can Salmon, well drained and flaked
Handful fresh Dill, roughly chopped
Method:
Heat oven to 210°C. Place crushed biscuits in the base of the tart plate. Place milk, flour, eggs and baking powder in the bowl and mix until well combined. Add cheese, salmon, dill and melted butter and thoroughly mix. Pour over the crushed biscuits in the tart plate and cook in the oven for 35 minutes until puffed and golden brown.

Cheese Crisps
3/4 cup plain flour
1/2 teaspoon salt
Good pinch cayenne pepper
60g butter
125g tasty cheese, grated
Yolk of 1 egg
Squeeze of lemon juice
Method: (1). Sift flour, salt and cayenne, rub in butter. (2). Add cheese and make into a firm dough with egg yolk and lemon juice. (3). Knead lightly and roll out into a thin sheet. Cut with floured cutter into rounds. (4). Place ont[o] a flat glass pizza plate or use turntable. (5). Cook approx. 8 biscuits each time on FULL POWER for 2&1/2 minutes. (6). Removed from plate and allow to cool.
Yield: Approximately 36 biscuits.

Cheese Fingers
(makes approximately 50)
1/4 cup plain flour
1/4 cup S.R. flour
1/4 tspn. paprika
1/4 tspn. salt
45g tasty cheese, cubed
15g butter or margarine, soft
1 egg, beaten
1 tbspn. water
small pinch cayenne pepper
Method: Mix flours, cayenne pepper, paprika, salt, cheese and butter until mixture is well combined. Add egg and water. Mix until a dough forms. Knead lightly on a floured board and roll pastry to 1/2 inch thickness. Cut into strips 3in. x 1/2in. and place on lightly greased oven trays. Sprinkle with salt. Bake in moderate oven for 10 mins. or until golden brown. Cool on the tray.
Note: Store cheese fingers in an airtight container.

Party Cheese Ball
1 lb. Philadelphia cream cheese, softened at room temperature
8 oz extra tasty Cracker Barrel cheese
1 tablespoon chopped red pepper or canned pimento
1 tablespoon chopped green pepper
1 tablespoon finely chopped onion
2 tablespoons Worcestershire sauce
1 teaspoon lemon juice
1/2 teaspoon salt
pinch cayenne pepper
2 oz. cashew nuts, chopped
Method: Beat the cream cheese until smooth, blend in shredded cheese. Add red pepper or canned pimento, green pepper, onion, Worcestershire sauce, lemon juice, salt and cayenne pepper; mix well. Chill for at least 2 hours. Shape into a ball and roll in chopped cashew nuts. Chill. Serve surrounded with cracker biscuits or Melba toast, providing a small knife for spreading.
Variation: Omit cashew nuts and roll in toasted chopped almonds or in chopped parsley.

Tuna Noodle Bake
150g macaroni
425g can tuna in springwater
1/2 cup frozen peas
1 tbsp oil
1 med onion diced
1 cup broccoli florets
300ml sour cream
1 cup tasty cheese
30g pack potato crisps
Method: Bring a large pan of water to the boil and cook macaroni for 5 mins. Add broccoli and peas, return to the boil and cook for a further 8 mins. Drain and set aside. Heat oil in the same large pan, saute onion until transparent, then gently stir in undrained tuna - stirring gently so it doesn't break up - then add the sour cream and half the cheese. When the sauce is smooth, add cooked macaroni and vegetables. Spoon into microwave proof dish, top with crushed potato crisps and remaining grated cheese. Microwave on high for 2 mins, allowing to stand for 5 mins before serving.
