Delicious Salad

1/2 head of celery chopped small
1/2 large onion chopped
1 medium carrot grated
1 apple chopped
small tin crushed pineapple
shallots chopped for added colour

Method: Mix together with mayonnaise and grated cheese.

A Delicious Pudding

2 cups hot Water
3 tablespns. Cornflour
1 cup Sugar
Juice of a Lemon
3 whites of Egg
Pinch of Salt

Method: Mix the cornflour with a little cold water, pour on the hot water, add sugar and lemon juice; boil the whole for a few minutes. Beat the whites of 3 eggs to a stiff froth, add to this the hot cornflour by spoonfuls, the whole beaten together. Turn into a mould, when cold turn out. The yolks of egg used for a custard with 1/2 pint of milk, and poured round the mould.

Savoury Cheese Balls

4 oz. softened butter
4 oz. grated mature cheese
4 oz. S.R. flour
1/2 teaspoon salt
Pinch cayenne pepper

Method: Mix all together and roll in balls. Roll in coconut. Press flat with fork and bake in a slow oven 25-30 minutes or till crisp. These are delicious.

A Delicious Celery Custard

Combine 1 cupful of celery cut in dice with 1 onion finely chopped. Cook both in 1 cupful of milk for five minutes, add salt and pepper, and pour over 2 beaten eggs. Bake in a buttered dish which has been placed in a pan of water for 1 hour.

Chicken Delicious

1 young chicken dissected into serving pieces, sprinkle with paprika, salt and pepper. Place chicken pieces side by side in a flat roasting pan or large casserole. Mix 1 tin of gourmet mushroom soup with 1 cup cream, pour this over chicken pieces, sprinkle liberally with chopped parsely [sic], place uncovered in a moderate oven and cook until chicken is tender. Serve with mashed potatoes and green peas.
