1 cup raw potatoes
1/2 cup finely chopped onions
1/2 teaspoon salt
1 diced banana
1&1/2 cups chicken stock or 1 pkt. cream of chicken soup or tin cream of chicken soup
1 cup diced peeled apples
1/2 teaspoon curry
1/2 cup diced celery
Method: Boil until tender and beat well. Add 1 cup cream and 1 tablespoon butter. Serve with nutmeg sprinkled on top. Also very nice chilled and served with chopped chives or nutmeg.

Egg Combo
Beat 12 eggs and 1/2 cup water mixed with 1 pkt cream chicken soup, salt and pepper. Place in frypan 300 deg. As egg mixture is cooking lift sides and allow uncooked mixture on top to flow underneath, cooking with margarine as required. When top egg mixture is nearly cooked, add chopped and browned cubes of bread, onion, pepper, bacon. Add small tin flaked drained tuna, small can 7 veg mix drained, slices of tomato, gherkins, sprinkle over parsley and grated cheese. Cook until cheese has melted. (Cook with lid on frypan.)

Chicken and Cheese Soup
An excellent mornay base, using less water in soup mix.
1 packet Continental chicken soup
1 cup grated carrot
1 cup finely sliced celery
3 Tbspn butter
1 onion, finely chopped
3 Tbspn plain flour
4 oz Kraft cheese grated
Method: Make up 1 packet of continental chicken soup as per directions, adding 1 cup grated carrot and 1 cup finely chopped celery. In another saucepan melt 3 Tbspn butter and fry 1 finely chopped onion until transparent. Add 3 Tbspn plain flour and stir well. Gradually add 500 ml. milk, add 4 oz grated Kraft cheese. Mix together with prepared soup. Serves approx. 8-10. Kept in the fridge a few days before using improves flavour.

Chicken and Beef Balls
1 pkt. chicken noodle soup, 1 cup soft bread crumbs, 1 small onion, 1 lb. minced steak, 1/2 lb. sausage meat, 1 egg.
Method: Add chicken noodle soup to 1/2 pt. boiling water and cook 5 minutes. Cool, place in basin, bread crumbs, onion (finely chopped), minced steak, sausage meat and egg. Add cooked soup mixture, and combine evenly. Shape into medium sized balls and roll in flour (little paprika optional). Cook and brown in hot shortening. Serve hot with spaghetti and tomato sauce.

Chilled Tomato Cases
6-8 small-medium tomatoes
200g cottage cheese
1 tablespoon gherkin relish
1 tablespoon Continental Savoury Chicken Supreme Soup
Method: Cut a slice off the end of each tomato and using a spoon scoop out most of the flesh. Chop tomato pulp and mix with cheese, gherkins and soup mix. Season inside of tomato cases with salt, pepper and a little sugar. Pile mixture back into cases. Replace lid or decorate as desired. Chill and serve.

Prepare 1 pkt. Continental brand Chicken Noodle Soup with only 3&1/2 cups water. Empty in contents small can asparagus cuts, 1/2 cup frozen peas and cook 5 minutes.

Speedy Chicken Casserole
1 chicken, cooked and chopped OR 1 kg chicken thigh or breast pieces, cooked in a fry pan
425g can condensed celery soup
425g tin condensed chicken soup
1 cup milk
425g tin corn kernels
1 medium carrot, diced
1 capsicum, finely chopped
1 cup frozen peas
1 cup grated cheese
Method: Heat soups and milk in a saucepan, stirring until blended. Remove from heat and stir in cooked chicken and vegetables, pour into greased baking dish. Spread over the top of chicken mixture and sprinkle with cheese. Bake for 30-40 mins at 200°C.
Hints: Serve with pasta, potatoes or salad. To ensure the casserole does not become too runny, add one can of soup at time and mix thoroughly. The amount of soup used may need to be reduced. Suitable to freeze.

Pasta with Creamy Salmon Sauce
250g pasta shells or spirals
1 medium onion, chopped
1 tablespoon poly or monounsaturated margarine
1 tablespoon plain flour
1/2 cup milk
440g tin cream chicken soup
440g tin pink salmon
1 cup grated cheese
Method: Cook pasta. While pasta is cooking, melt margarine, fry onions until tender. Add flour, cook for 1 minute. Remove from heat, gradually add milk. Add undiluted soup. Return to heat, stir while bringing to boil. Boil one minute. Stir in cheese and salmon and heat thoroughly. There is no need to drain the salmon. Serve with drained pasta. Serves a family of 4-6. Suitable for freezing.

Lib's Chicken
1 chicken (a bag of pieces) cut into portions and rolled in a mixture of flour, salt, pepper and plenty of paprika (it will look pinkish). Put in casserole dish and sprinkle lots of cut parsley over it.
In another dish mix one tin of condensed chicken soup with one large carton of cream, and pour over meat.
Bake for 1&1/2 hours at about 300°-350°F (150°-180°C) but turn back if bubbling. If not ready to eat, can be turned right back to lowest and left in oven.

23 cm Pie plate
Saucepan
Can opener
Kettle
Grater
Mixing bowl
Preparation Time: 15 minutes
Cooking Time: 25 minutes
Ingredients:
1 packet Chicken Noodle soup
1&1/2cups boiling Water
2 cups Breadcrumbs (soft)
1 teaspoon chopped Onion
1 tablespoon chopped Gherkins
1 hard-boiled Egg (chopped)
1 tin Tuna 225 gram (drained and flaked)

Chicken Noodle Savoury
1 pkt. chicken noodle soup, 1 lb. minced steak, 1 medium onion chopped, 3/4 cup uncooked rice, 1 pt. water, salt and pepper to taste, 2 dsps. tomato sauce (optional), 2 dsps. Worcestershire sauce (optional).

Asparagus Mornay
Equipment Needed:
Sharp knife
Measuring Cup
Can opener
Saucepan
Preparation Time: 10 minutes
Cooking Time: 10 minutes
Ingredients:
1 medium Onion (diced)
2 tablespoons Butter / Margarine
1 tin Asparagus (including liquid)
1 tin Cream of Chicken Soup (condensed)
1 cup Milk
4 slices Ham
1 cup Chicken (cooked and cubed)
2 tablespoons Plain Flour
3 sliced boiled Eggs
1/2 cup Cream
Method:
Place ingredients in a saucepan and bring to boil. Thicken with plain flour made into a paste with a small quantity of milk. When thick, add eggs and cream. Can be served hot or cold.

Chicken Ooh La La!
2.1/2-3 lbs. chicken cut into pieces
2 onions (chopped)
1 clove garlic (crushed)
2 tablespoons red & green pepper diced
1/4 lb. sliced mushrooms
4 rashers bacon (diced)
2 or 3 peeled sliced tomatoes
1 stick celery (diced)
3 tablespoons flour
salt and black pepper
1 teaspoon mustard
1/2 cup white wine or dry sherry
1 large tin cream of chicken soup
Oil or butter for frying
Method: Cut chicken into bite size pieces and roll in dry ingredients. Heat butter in heavy pan[,] add mushrooms, peppers and onions. Cook gently with lid on till tender then drain. Now brown coated chicken all over. Add remaining flour etc. garlic, bacon, wine, tomatoes, soup and celery. Cook gently with lid on for 30 minutes. Add peppers, mushrooms and onions and cook another 30 minutes. Place onto flat dish and serve garnished with mashed potatoes and parsley.

Sweet and Sour Fish Fingers (Microwave)
Equipment Needed
Measuring Cup
Tablespoon
Microwave Jug
Microwave safe Platter large enough to hold fish fingers
Preparation Time: 12 to 15 minutes
Ingredients
1 packet Chicken Noodle Soup
1/2 cup Water
1/4 cup Vinegar
2 tablespoons chopped Spring Onions
1/2 Green Pepper, chopped
1/4 cup Water
2 tablespoons Brown Sugar
450 grams can Pineapple Pieces undrained
1 tablespoon Cornflour
15 Fish Fingers
Method: Blend soup mix with all ingredients except cornflour, 1/4 cup water and fish fingers. Microwave on High for 3 to 5 minutes until boiling. Blend cornflour with 1/4 cup water and stir into sauce. Microwave on High for 1 minute, stir then repeat until sauce has thickened. Place fish fingers on platter. Microwave on HIGH for 2 minutes, then pour sauce over and Microwave a further 1 minute.

Curried Egg Mornay

Juicy Roast Chicken
1.5 kg chicken pieces
1 can cream of chicken soup
1/2 cup white wine
Method: Place chicken pieces in shallow baking dish. Dot with butter. Roast uncovered at 350F for 30 mins. Blend soup and wine. Pour over chicken and bake uncovered for another hour. Chicken becomes golden brown, but stays very juicy.

Tit Bits (very tasty)
1 pkt nutri grain, 1 pkt cream of chicken soup, 1 pkt French onion soup, 2 pkts salted peanuts, 1 level dsp curry powder, 1/2 cup warm oil.
Method: Mix all dry ingredients together and then add warm oil and stir well. Keep in airtight container.
