Grate some kraft cheese into a bowl, add some tomato sauce and mix the cheese. Spread this mixture over grilled chops, as soon as they are cooked. Put back under griller and leave until cheese starts to melt and brown, then serve.

Eureka Lamb
6 lamb chops (forequarters or chump)
2 tbsp oil
1 small tin crushed pineapple
3/4 cup seeded raisins
2 oranges - peeled and sliced
1/2 cup honey
1 tsp salt
1/2 tsp cinnamon
1/2 tsp mixed spice
Method: Brown chops in oil then place in a casserole dish. Mix together remaining ingredients and pour over chops. Bake in moderate-slow oven for 30-40 minutes or until chops are tender. Delicious when served with rice and green vegetables.

Hawaiian Lamb Chops
6 Short Loin Lamb Chops; 1/2 Cup Soft Breadcrumbs; 1/2 Cup Chopped Tomato Pulp; 1 Teaspoon Brown Sugar; 1 Dessertspoon Soft Butter; 1/2 Teaspoon Salt and Pepper; 6 Bacon Rashers; 6 well-drained Pineapple Rings.
Method: Twist chops into good shape and wrap a bacon rasher around each, securing firmly with a tooth pick. Place the drained pineapple rings in a greased baking dish and top each with a bacon wrapped chop. Combine breadcrumbs, tomato pulp, brown sugar, butter, salt and pepper, mixing well. Form into 6 patties and place one on top of each chop. Cover and bake in a moderate oven for about 1/2 hour. Remove lid or alfoil and cook for further 20 minutes, or until chops are cooked through. Arrange on a hot platter and garnish.

Marinated Lamb Chops
Slice 2 white onions into casserole, with 6 lamb chops from which surplus fat has been removed. Season with pepper and salt. Cover with either claret or hock, and allow to marinate for a few hours before cooking. Add 2 small tomatoes, skinned and sliced. Cook gently. Thicken before serving and add 1 tsp of butter and parsley.

Delicious Curry
1 apple, 1 onion, 1 heaped dsp. flour, 1 dsp. curry (Lion), 1 tsp. sugar and salt to taste, 1 dsp. chutney, 10 chopped sultanas, 1 tsp. lemon juice, 1 tbsp. fat, 1 pint stock.
Method: Boil lamb chops or steak, save the stock. Melt fat, when hot add chopped onions and apple, fry until brown, add curry and flour, add all other ingredients, stirring all the while. Add stock last. Add meat and cook for 2 hours on a very slow heat. Diced carrots may be added with the meat and 1 hour before serving place in a potato for each of the family. Serve with well drained rice.

Sago Chops
1&1/2 lbs. lean mutton chops
2 tbspns. sago
small cup tomato sauce
salt and pepper to taste
cold water to cover
Method: Put in a covered dish and cook in oven until sago has dissolved into sauce and water. 1 to 1&1/2 hours. Also done with mutton neck chops.

Steak Casserole
Method: Roll steak or chops in seasoned flour and place in casserole dish. Mix a packet of French onion soup with 2-3 cups of water (which you add gradually, otherwise it is likely to go lumpy). Cook in a mod. oven for 2-2.1/2 hours. Mushroom or onion soups are nice with steak. Tomato or curry soup mixed with chops. Chicken pieces done the same way with asparagus is quite delicious.

2 tblspns Oil
Egg
Salt & Pepper
Method: Heat 2 tablespoons fat in dish in oven. Dip chops in seasoned egg and then in coconut. Place in hot oil and bake in moderate oven 1 hour or until meat is cooked and crust is golden. Baste if necessary.

Lamb Chops Billabong
6 lamb chops
6 pineapple rings
6 rashers bacon
1 egg
Breadcrumbs
Method: Bone chops and form into rings, put bacon around chops, brush with egg and breadcrumbs, coat with oil and bake in oven approx. 15 minutes at 375F.
Rice Accompani[m]ent: 2 cups rice, chopped onion, chopped apple, 1/2 green pepper, 1 dessertspoon curry, 1 dessertspoon chutney, 1 dessertspoon lemon juice, salt and pepper.
Method: Fry onion in marg. until brown, add chopped apple and pepper, then curry, chutney and lemon juice, fry together until cooked.

Mutton Diane
6 leg chops
3 tbspns. butter
2 tbspns. Worcestershire sauce
3 cloves garlic, chopped
4 tbspns. chopped parsley
Method: Trim chops and flatten lightly with a meat mallet. Heat butter in a large frying pan until hot. Add sauce, then mutton and cook 3 minutes on medium high heat. Sprinkle garlic into pan, turn meat and cook for further 3 minutes or until done to taste. Serve meat with garlic and parsley mixture on top. Steak cut from the leg of mutton is good to use. Slice down leg.

Uncle Percy's Chops
1.1/2 lb Lamb chops
1 Garlic clove
2 tbspns Flour
1.1/2 tbspns Sugar
2 tbspn Tomato Sauce
2 tbpsns Vinegar
1/2 tspn ground Ginger
1 tbspn Curry Powder
2 cups Water
Salt and Pepper
Method: Trim fat from chops. Crush garlic, combine all ingredients, pour over chops in baking dish and let stand for at least 1 hour. Cook uncovered in slow oven approximately 1 hour or until tender.

Lamb Chops with Apricots
4 chump lamb chops
2 tbsp seasoned flour
1 tbs oil
1 onion sliced
2 tbs soy sauce
1 green pepper sliced
1 tin apricot halves undrained
Method: Remove fat from chops and coat with seasoned flour.
Heat oil and brown chops, remove chops from pan and add onion and green pepper and brown. Add apricots with liquid and soy sauce. Add seasoning and return chops to pan. Cover and simmer for 45 minutes stirring.

Jarred Chops
In times of no onions or a scarcity of onions.
Roll chops in
tablespn. plain flour
1 teasp. sugar
1/2 teasp. salt
Marinate chops in
3 tablesp. tom. sauce
2 tablesp. worcest/sauce
tablesp. vinegar
1/2 teasp. mustard and curry (each one)
1 good cup water.
Stand at least one hour, preferably overnight, prior to baking.

Rough Top Chops
Take as many chops as required, place in a pyrex dish, cover with milk and cook in a steady oven for about 2&1/2 hours. Stir occasionally. Thicken with flour, return to oven for 15 mins., top with breadcrumbs and seasoning, and return to oven to brown. Serve with vegetables.
