Vegetable Rice Pie

Base:
3/4 cup rice - cook and mix with 1 egg.
Press mixture over base and sides of greased 9" pie plate.

Filling:
250 g zucchini sliced
125 g mushrooms
1 small red capsicum chopped
3 eggs
1/2 cup milk
oregano, salt, pepper, paprika, garlic
150 g mozzarella cheese, sliced
80 g butter
1 onion

Method: Heat butter, saute chopped onion and garlic. Add zucchini, mushrooms, capsicum and stir till tender. Put into rice base.
Beat eggs and milk and add oregano, salt and pepper and pour over vegetables.
Arrange cheese over top and sprinkle with paprika.
Bake in a moderate oven until pie is set and cheese is golden brown - about 30 minutes.

Tomato and Cheese Patties

2 lb old Potatoes
1/2 oz Margarine
2 tbspns Parsley
Salt and Pepper
Breadcrumbs
4 small firm Tomatoes
4 oz Mozarella [sic] Cheese
2 Eggs
Flour
Oil

Method: Cook potatoes and mash well with butter, parsley, salt and pepper. Slice 16 slices tomato, sprinkle with salt and pepper, slice 8 slices cheese. Place 1 slice cheese between 2 slices tomato. Shape warm potato around to seal tomato and cheese and shape into patties. Coat lightly with flour, dip into lightly beaten eggs and coat with breadcrumbs. Heat oil in pan and cook till golden brown.

Zucchini Carrot Pancakes

1/2 cup wholemeal plain flour
2 eggs
1/4 cup chopped parsley
1/2 cup milk
1/4 cup water

Filling and Sauce:
15g butter
1 carrot
3 zucchini
60g grated cheddar cheese
60g grated mozzarella cheese
15g butter
3 shallots
400g can tomatoes
1 chicken stock cube

Method: Sift flour, stir in combined eggs, parsley, milk and water. Stand 1 hour. Cook 8 pancakes in hot greased pan.

Fill: pancakes with grated carrot and zucchini[,] add cheese. Roll up firmly and place in heat proof dish.

Sauce: Saute chopped shallots in butter[,] add undrained mashed tomatoes and stock cube, simmer for 15 minutes. Pour over pancakes[,] sprinkle with mozzarella cheese. Grill until melted.
