1 cup sugar
1 cup coconut
1/2 cup plain flour
1 tspn. vanilla
4 eggs
2 cups milk
4 oz. (125g) melted butter
Method: Mix all together, put in a greased pyrex dish. Cook 30-45 mins. in a moderate oven. This ends up with a pastry type bottom, egg custard in centre, and a coconut top.
